Banana Blueberry Muffins

These were wonderful! I increased the cinnamon to 1 tsp, did 2 eggs (instead of egg whites), and instead of blueberries I added crasins. When you pour the batter into the muffin tin the batter looks very think and kind of dry, but when the come out of the oven they are great! I love this recipe because it is relatively healthy with whole wheat flour, only 1/3 cup of brown sugar and no oil, butter or honey.

Tasty Lentil Tacos

Low Sugar Strawberry Rhubarb Crunch

We loved it! Realtively healthy and low on sugar. Modification: I did 2 cups chopped rhubarb (that was all I had) and 2 cups of strawberries and it was perfect.

These were great! I increased the applesauce to 1 cup and didn't use the oil. I also did less sugar- 1/2 cup was plenty.

Addictive Sweet Potato Burritos

Baingan Bharta (Eggplant Curry)

Excellent! Just like going to a restaurant. I did a few modifications: I cut the eggplant in half and placed it cut side down on greased aluminum foil to bake. Instead of Garlic ginger paste I did 3 cloves of garlic and 1 tablespoon of ginger. I used 1 tsp of powdered cumin instead of seeds. I used the whole 6 oz of plain nonfat yougurt (this is a little more than 1/2 cup). I increased to two tomatoes (because many reviewers said it was burning to the pan and not juicy enough. I used 1/2 a jalepano pepper instead of the whole pepper and is was plenty spicy. Wonderful recipe!

Excellent, as is. Better with the cucumbers peeled (a lot of the pictures have the cumcumber peel on). This is the best recipe I have ever tasted with cucumbers involved.

Zucchini Brownies

I decreased the sugar to 1 1/4 cup. The brownies were WAY too sweet! (makes me stick to my stomach) Maybe I should omit the icing or use a lot less icing. If I try it again, I would decrease the sugar even more and use applesauce instead of the oil.

Chewy Chocolate Chip Oatmeal Cookies

There were the worst cookies I have ever tasted. It had way to much salt and even too much sugar. I had three trays that went into the oven. I tried to change my technique with each, but they were all bad. The cookie's on the first tray would not stay together even after cooling. After cooking for 13 minutes, I felt like I was eating cookie dough, which I do not like. The second tray I cooked for 15 minutes, the cookies flattened out and did not come of the the tray at all. So the 2 tray ended up with no cookies, just crumbles. The 3rd tray was the same as the first. I would throw them out, but I have to provide a snack for a preschool class and I don't have enough time to make another dessert. Kids usually don't care. But I was disgusted buy the taste. Unfortunately, I didn't read the reviews before making it. Big mistake, it was 4.5 stars so I trusted it.

Black Bean Chili

Great! I made some changes. I didn't sautee the veggies because I used the crockpot. I just dumped everything in the crock pot. I used canned corn. I used 2 cans of diced tomatoes instead of fresh. As directed, I pureed 1.5 cups, but later I ended up pureeing another 2 cups. Without pureeing this is a soup recipe. When you puree, the dish thickens up and becomes chili. Next time I would probably puree at least 4 cups. I cooked it on high for 4.5 hours. This turned out great!

Honey Nut Bars

I did some modifications- 1/2 cup white flour + 1/4 cup wheat flour; instead of walnuts, I used crasins; decreased confectioners' sugar to 1/6 cup; and I made a mistake- it says "dates, pitted" and in my mind I read prunes because they are pitted so that is what I put in (don't laugh). These were good. Everbody in the family said that they liked them. However, they didn't ask for a second piece and said that I didn't need to make this recipe again. My husband says they are a little too sweet. The kids wanted chocolate chips in them. Bottom line: Their good and "healthy", but not AMAZING.

Four Cheese Macaroni Casserole

A number of reviewers said this recipe was to dry. One of the reviewers added more cheese and cream to make this recipe creamy, so I modified it in a similar way. I mixed 1.5 cups of cheddar cheese, 1.5 cups of mozzarella cheese, 1/2 cup of parmasean cheese, and 1/2 cup of feta cheese, and 1/2 cup of milk INTO the macaroni. I didn't use the italian spice (but did do 1 tsp basil, 1 tsp oregano, 1/4 tsp salt and 1/4 tsp pepper). I don't think putting the tomato mix in the middle instead of mixing it in is a good idea. On the top, I added 1/2 cup cheddar cheese, 1/2 cup mozzarella cheese, 1/4 cup parmasean cheese and 1/8 feta cheese. In the end, it was creamy. There was to much feta, would definitley decrease amount (maybe 1/8-1/4 in the macaroni mix). I would increase the milk to 3/4 cups. My kids didn't like tomatoes in their M&C, but husband liked it.

Simple Scones

Excellent! I made some modifications. I used 1 cup white flour and 1 cup of wheat flour. I decreased the sugar to 1/4 cup (more than that would make it too sweet). I didn't use frozen butter, I sliced up a stick of refrigerated margarine. I did 1/4 cup raisins, and 1/4 cup craisins. I didn't realize that I didn't have sour cream, so I used low-fat rasberry yogurt. Next time I might use all wheat flour (no white). I'm not sure why people are using a food processor. Mixing the flour mixture with my hands took at most 45 seconds. Mixing the egg mixture into the flour mixture with a fork took at most 30 seconds. It would take a lot longer to set up the food processor and then have to clean it. Maybe using frozen butter makes it harder to mix. So use refrigerated margarine and don't use the food processor. Also, with refrigerated margarine you don't have to use a box grater. That way you don't have to clean the box grater. (You can probably tell I try to minimize clean up).

Spinach Whole Wheat Quesadillas

This was great! I modified it a little bit. I used frozen spinach. I cooked the spinach in the microwave and then added the chili powder and garlic powder to the spinach. I did decrease the garlic powder to 1/4 tsp. I didn't add the green onion. I followed the rest of the procedure in the frying pan. I served it with sour cream. It would have been great with salsa but I didn't have any salsa in the house.
