Famous Chicken Adobo

Reviewed: Sep. 7, 2010
I minced so many garlic cloves, I did not use the garlic powder (seemed redundant). I added 1 tsp of sugar, like other reviewers suggested. Worked out great!

The Best Fresh Tomato Salsa

Reviewed: Aug. 11, 2010
Too spicy. I used a jalapeno from my garden. I would add 1/2 of the amount called for.

Coco-Scotcheroo Cookies

Reviewed: Aug. 9, 2010
Excellent! Did 1/2 cup of margarine instead of adding the shorting. I decreased the white sugar to 1/4 cup. It think it is still too sweet. Next time I will decrease on the sugar again.

Company Couscous

Reviewed: Aug. 8, 2010
Instead of water used vegetable broth. Used 1/2 Tablespoon of balsalmic vinegar. I used 1/3 cup of Parmesan cheese and it was too much. Next time I will stick with the 1/4 cup.

Lentil Soup with Lemon

Reviewed: Aug. 4, 2010
Excellent! I used 1 tablespoon of ketchup instead of tomato paste (didn't want to waste the rest of the can of the tomato paste). I used 2 cans of vegetable broth (14.5 oz each) to replace the chicken broth. Added 1/4 tsp of chili powder instead of 1/8 tsp. Very filling, 4 servings for us. We served it with home-made bread and salad.

Slow Cooker Enchiladas

Reviewed: Jul. 28, 2010
Gooy. To me that mean's it's not home-cooking with "real" ingredients. At 1 hour it was still cool in the middle.

Popovers

Reviewed: Jul. 4, 2010
I doubled the recipe and added 2 tsp of vanilla. Cooked for 15 minutes on 450 and 15 minutes on 350 degrees. The outside looked great. The inside was a little doughy. I've never had popovers before, so I'm not sure what the inside is supposed to look like. They were good!

Rainbow Pasta Salad I

Reviewed: May 30, 2010
I thought the dressing was aweful for the salad. Maybe the brand was bad, but homemade salad dressings are so much better.

Lime Fish Tacos

Reviewed: May 20, 2010
Excellent (4.5 stars). I used tilapia. I marinated the tilapia in lime juice for 1 hour. For the sauce I decreased the lime juice to 1.5 tsp instead of 2 tsp, and added ~1 Tbl of fresh diced cilantro. When I was done cooking the fish it was in a butter/lime juice bath. So, I'm not sure why some people thought the fish was dry. The fish was perfect.

Healthy Banana Cookies

Reviewed: May 20, 2010
Instead of vegetable oil I used non-sweetened strawberry applesauce. Instead of 1 cup of dates, I combined crasins, coconut and chocolate chips to make 1 cup. The finished product was good, but not great because the banana/oat part of the cookies were too bland. I'm pretty sure adding honey (like many others reviewer did) would correct this problem.

I didn't do the lemon juice (didn't have it) and only marinated for 4 hours. It wasn't very flavorful. Just O.K. I won't make it again.
