Mama Corleone's Sausage and Peppers

Reviewed: Jan. 8, 2011
I should have read the reviews. It wasn't that flavorful, kind a bland. I used chicken sausage, which was wonderful and flavorful, but the rest of the meal wasn't. Needed a lot more garlic (I would use at least 3 cloves). I would have decreased the amount of peppers and added onions.

Turkey Shepherd's Pie

I thought this was great, but the texture of the carrots was weird. I would do peas instead of carrots.

The Best Ugly Turkey

Reviewed: Dec. 25, 2010
The turkey was beautiful! I'm not sure why people say it looks ugly. It was very moist and flavorful. We did a few things might have helped keep it pretty: 1) We cooked for about 2.5 hrs before flipping 2) Turning was a two person process - one person used the handles of big spoons (inserted into both cavities sort of like a rotisserie) to hold the bird up and the other person flipped it.

Special Turkey Gravy

Reviewed: Dec. 25, 2010
I'm rating my modification as 5 stars. This is what I did. Instead of turkey stock I used 2 cans of vegetable broth (~15 oz). We didn't use any water, salt, pepper, or celery salt.

Easy OREO Truffles

Reviewed: Dec. 25, 2010
Very rich. I used fat free cream cheese. I put the cream cheese/ oreo crumbs mixture in the freezer for about 30-40 minutes to harden it up. Then, it was really easy to make the mixture into the balls. When I dipped the balls into the chocolate the outer chocolate hardened VERY quickly even while I was finishing the rest of the balls. I wish I didn't crush the 9 cookies in the beginning. I didn't use them. I wish I had the whole oreos to eat. I actually used mint oreos for Christmas.

Clone of a Cinnabon

Reviewed: Dec. 23, 2010
Wonderful recipe. As other reviewers mentioned, I prepared it in a 2 day process. If your'e serving it for breakfast, it is much easier to prepare the buns the night before. Once I got to the point where I placed the buns in the pan, I covered them up and put them in the fridge. I also prepared the icing the night before and put it in a separate container in the fridge. The next morning, I cooked buns at 350 degrees for 30-40 minutes. I put the icing container on top of the stove. The stove wasn't on, but the heat from the oven warmed it up. So when the bun were done, I poured the icing on. It worked perfectly. The only cream cheese I could find was fat free, but it was great that way.

Sandy's Chocolate Cake

I halved the recipe and did TWO 9 inch pans and cooked for 25 minutes. It was a dry cake. I would never make it again.

Steff's Shepherd Pie

Reviewed: Dec. 4, 2010
This was great. Instead of a can of green beans, I did ~ 14 oz of a combination of frozen peas and corn. I increased the cheese to 1.5 cups. For the mashed potatoes I did instant for 6-7 people (2 2/3 cup of potato spuds). It made more than 2 cups, but it works great.

Cheese and Prosciutto Focaccia

Reviewed: Nov. 13, 2010
This was EXCELLENT! My kids (7 years and under) loved it too. Very easy to make. Very different than what we usually make. Very strong italian flavors. It is very hard to roll the dough out unless it is at room temperature, so put the dough on the counter before hand.

Macaroni and Cheese with Veggie Bacon

Reviewed: Nov. 7, 2010
Excellent! The best macaroni and cheese recipe I have ever tried. Not to creamy, not to "chunky." Has flavor from the seasoning, not blah like other recipes. I doubled the recipe in a 9 x 13 pan as is, except I didn't add bacon (I didn't have any).

Homesteader Cornbread

It wasn't as buttery as I like (but there isn't margarine of butter in it!) It wasn't sweet enough but I had decreased the sugar to 1/2 of a cup.

Three-Cheese Potatoes

Reviewed: Oct. 10, 2010
I baked it in the oven 350 degrees for 35 minutes and then another 5 with the cheese and bacon. The potatoes weren't done, so it wasn't that good. It was time to eat, so I didn't have time to cook it more. I felt bad eating it because of the fat and calories. Next time I would cook it more, not include the bacon and decrease the cheddar/mozarrella cheese.

Pretty good. I would not add the mustard or pickle relish; just add the mayo.
