Baked Ziti I

Wonderful recipe! I used spaghetti sauce with ground turkey that I had in the freezer (It was probably less sauce than recommended, but it was great). For the provolone cheese, I used 1/2 lb of sliced provolone cheese. I increased the mozzarella cheese to 3 cups.

Beef Enchiladas II

Quick and Easy Green Chile Chicken Enchilada Casserole

I thought it was great. My husband thought it was bland. I would add onion, red pepper, and green chilis next time. I did modify it. I couldn't find green chili enchilada sauce, so I used red sauce. I did 2 lbs of ground turkey instead of chicken. I was so thankful that I followed the other reviewers advice- Don't pour the echilada sauce into the dish. I put the enchilada sauce into a pie plate. I tore each torillas into 4 pieces. Then I dipped each tortilla piece into the enchilada sauce to coat it and then added the pieces into the baking dish.

Mini Meatball Subs

Excellent, Excellent recipe! I doubled the recipe and it made 35 meatballs. I used ground turkey, but followed all the other directions. The adults ate it on rolls and the kids had the meatballs and sauce over spaghetti. The best meatball recipe I've tasted.

Quick and Easy Tuna Casserole

Great recipe! I made a few changes. I sauted the onion with 2 cloves of minced garlic. Then I put everything except the peas and noodles into the saute pan to heat it up. I also added 1/2 cup of milk. Next time I would increase the milk to 1 cup to make it more creamy and less sticky. I also added crushed Ritz crackers (about 1 cup) mixed with a little bit more than 1 Tbs of melted margarine on top of the casserole. I cooked it at 350 for 20 minutes. Turned our terrific.

Slow Cooker Sweet Chicken Chili

Easy to make. Very easy to shred the chicken, but there was too much chicken and I only used 5 breasts. I didn't think it was sweet. There was hardly any liquid in the "chili." We had it on torillas. It wasn't spicy enough for us even with my modifications. I followed alot of ideas from other reviewers. I drained and rinsed the beans. I added 2 cans of diced tomatoes (UNdrained). I also added 2 T chili powder, 2 cloves of garlic minced. Next time I would use 3 T of garlic powder and add green chilies.

Tex-Mex Beef and Cheese Enchiladas

Excellent! I did as another reviewer did- decreased the water in half and did not add flour of sugar. I used flour tortillas. Added 1 onion chopped up, Everybody loved it. I MADE THIS A SECOND TIME- I didn't have enough chili powder and only added 1 Tablespoon and it was great that way too.

Crustless Spinach Quiche

Excellent! Wasn't greasy. I changed one thing- I used cheddar cheese instead of Muenster. I also added 6 strips of Morningstar Veggie Bacon cut up. So it was a vegetarian meal. My kids hate spinach but all 4 loved it (14 months - 8 years).

Vegetarian Tortilla Soup

I added 1 can of black beans, decreased chili peppers to 2 cans and decreased cumin to 2 T. After it was all cooked and I ate one bowl of soup, I remembered that I wanted to add the lime juice like a lot of reviewers recommended (1/3-1/2 cup). That first bowl of soup was good/great. I added 1/3 cup of lime juice to the rest of the soup and mixed it in. Way too much lime and it ruined the soup! I'm cooking the soup again to see if it helps decrease the lime taste.

Lentil Quiche

It was good but not great. I think it would have been aweful/flavorless if I didn't follow suggestions from the reviewers. I sauted the onions and 2 cloves of garlic (minced) in olive oil in a non-stick pan. I didn't add tomatoes. For seasoning I did 1 tsp basil, 1 tsp oregano, 1/2 tsp pepper, 1/2 salt. I cooked it in a 8 x 10 pyrex. It was done in 35 minutes.

Mama Corleone's Sausage and Peppers

I should have read the reviews. It wasn't that flavorful, kind a bland. I used chicken sausage, which was wonderful and flavorful, but the rest of the meal wasn't. Needed a lot more garlic (I would use at least 3 cloves). I would have decreased the amount of peppers and added onions.

The Best Ugly Turkey

The turkey was beautiful! I'm not sure why people say it looks ugly. It was very moist and flavorful. We did a few things might have helped keep it pretty: 1) We cooked for about 2.5 hrs before flipping 2) Turning was a two person process - one person used the handles of big spoons (inserted into both cavities sort of like a rotisserie) to hold the bird up and the other person flipped it.

Special Turkey Gravy

I'm rating my modification as 5 stars. This is what I did. Instead of turkey stock I used 2 cans of vegetable broth (~15 oz). We didn't use any water, salt, pepper, or celery salt.

Easy OREO Truffles

Very rich. I used fat free cream cheese. I put the cream cheese/ oreo crumbs mixture in the freezer for about 30-40 minutes to harden it up. Then, it was really easy to make the mixture into the balls. When I dipped the balls into the chocolate the outer chocolate hardened VERY quickly even while I was finishing the rest of the balls. I wish I didn't crush the 9 cookies in the beginning. I didn't use them. I wish I had the whole oreos to eat. I actually used mint oreos for Christmas.

Clone of a Cinnabon

Wonderful recipe. As other reviewers mentioned, I prepared it in a 2 day process. If your'e serving it for breakfast, it is much easier to prepare the buns the night before. Once I got to the point where I placed the buns in the pan, I covered them up and put them in the fridge. I also prepared the icing the night before and put it in a separate container in the fridge. The next morning, I cooked buns at 350 degrees for 30-40 minutes. I put the icing container on top of the stove. The stove wasn't on, but the heat from the oven warmed it up. So when the bun were done, I poured the icing on. It worked perfectly. The only cream cheese I could find was fat free, but it was great that way.
