Eggplant Parmesan For the Slow Cooker

Pretty good. Way to difficult to fry the eggplant. It would be alot better to bake them. See Eggplant Parmasean II on All Recipes to see how to bake them. They are mush anyway after they are in the crock pot (not crisp at all), so no reason to fry. Used 2 large eggplants, 1.5 bottles of spaghetti sauce, and cooked it on Hi for 2 hours.

My Potatoes

This was very easy and the kids loved it. I melted the margarine and poured it over the potatoes. I sprinkled parsley, rosemary/garlic mix and parmesean cheese on top.

Simple Whole Roasted Chicken

great recipe! Doubled the spices and put a quartered onion in the chicken. I put the spices on 2 hours before cooking and had no problems.

Enchilada Pasta Bake

I modified it, using what I had in the kitchen. Instead of chicken, I used 1/2 lb of ground turkey meat that was seasoned with taco seasoning. I used 2 T dried cilantro. I used 1 green pepper and 1/2 yellow onion (instead of red and yellow pepper and green onion). I also added 3/4 of green chili's can (4 oz), because I was afraid it would be spicy. Husband liked it, kids didn't really.

Melt-in-Your-Mouth Broiled Salmon

great and easy. Didn't use fresh dill-just added 1 tsp of dried dill to the butter sauce. I did not turn them (because they wouldn't stand). It didn't say whether to broil on hi and lo. I started on hi, and it looked like it was going too fast, so I switched to lo and it wasn't done after the 9 minutes. I cut salmon into smaller pieces (I had 1.5 lbs of salmon not cut) and switched it for hi for 3-5 miunutes and it was done. Next time, I will cut them in personal size portions before broiling.; made this again, no flavor, boring

Quick and Easy Shrimp Fajitas

Way too much taco seasoning. Should have done 1/2 package. I wiped off the sauce with paper towels and made another fajita. Husband thought it was ok but not great.

Speedy Chili Pot Pie

It was easy and tasted relatively good. However, after cooking for 25 minutes the center of the bread was not cooked (was liquid dough in the center). I covered it with aluminum foil and had to cook for another 30-40 minutes. I was frustrated with the length of time and our delayed dinner.

Zucchini Pizza Bake

Great recipe! I used summer squash (I did peel it). I used 3 eggs as other reviewers recommended but I thinks that was too many. Used cheddar instead of Monterey Jack. Used tomato basil spaghetti sauce instead of tomato sauce and italian seasoning with great results. Two of the kids didn't like the crust part, but the others I fooled and they liked it.

Black Bean and Rice Enchiladas

Kids didn't like it (all under 10 years of age), but parents did. Good meal. Nice to have something vegetarian. I did modify it. I used red pepper instead of green, through in 1/2 cup of shredded zucchini, cut up 1.5 fresh tomatoes instead of canned, white rice instead of brown, put the cilantro in the bean/rice mix, and added cheese inside the tortillas. I think it would taste a little better with some chicken. Prep time was a little too long for my standards (lots of chopping).

Chicken Chimichangas with Sour Cream Sauce

This was very good. I baked it at 425 degrees for 15 minutes instead of deep frying it. Shredding the chicken makes this longer prep, but it was good. Next time I might just cut up the chicken before adding it the the pan.

Crustless Cheese Quiche

5 stars with modifications. I doubled the recipe. I read the reviews that said to drastically decrease the amount or add no margarine. The double recipe called for 1 cup of margarine (2 sticks!), but I added only 3 TBS. I agree. You probably don't need the margarine at all. I didn't have any bacon so I added chopped up breakfast sausage. If I had any veggies in the house, that would have been great to add.

Fried Empanadas

They were tasty but very hard work (more that 2 hours in the kitchen). It would have been easier to roll our the dough and use a cookie cutter to cut out the thin circles (but the diameter was not specified). I used 1/2 cup of margarine (1 stick) instead of the shortening. I baked at 350 for 20 minutes and it was not done, so I continued at 400 degrees for another 15-20 minutes- (that's when it started turing golden brown.
