Pumpkin Turkey Chili

Reviewed: Oct. 7, 2009
Yum! I can't give it five because I didn't follow the recipe exactly. However, I know that it is a great idea! I used buffalo meat, added a can of chili beans, a small can of tomato sauce, some brown sugar, (I like my chili sweet) and about a 1/2 cup of water. I also used a package of chili seasoning mix, But it was great! It doesn't taste like pumpkin but the texture is sooooo creamy, a real comfort food! I will definately make this again. Thanks for a great idea!

Merritt's Butternut Squash Gratin

Reviewed: Dec. 1, 2009
Love this! I love the savory squash. Following the advise of another reviewer, I did cook this mostly on the stove then put into the oven for awhile. The important part of stove top cooking is to make sure you get your onion caramelized. I also used asiago and mozzarella for my cheeses (it's what I had) and Italian bread crumbs. My husband loved it and he doesn't eat squash! It really didn't take that much work. I used a really good vegetable pealer to peel the squash and a sharp knife to cut it into chunks. Well worth the effort. Thanks for a great recipe!

Quick Savory Cranberry Glazed Pork Loin Roast

Reviewed: Dec. 29, 2009
This is SO GOOD!!! I added some ground rosemary (I love rosemary and pork) and I used pork tenderloin. So good. I recooked the sauce in a pan till boiling so that I could serve it with the finished meat. My family loved this. Even my daughter-in-law who doesn't like pork. I have also tried this sauce on chicken. Very good. Thanks for the great recipe!

Wonderful Raspberry Walnut Dinner Salad

Reviewed: Jan. 29, 2010
Salad is always good. I often make one just like this. Any fruit vinegrette works great. I add some blue cheese and ham to make a wonderful salad. So yummy, you will want to eat it often with so many variations for a green salad.

Harvest Pork Stew

Reviewed: Nov. 2, 2010
So, can I give this 10 stars? Great recipe! I followed the spice measurments exactly. Be sure to do that because the amounts were perfect! My husband loved this. I did add some rutabaga because it is awesome with pork. You can also add turnips and/or parsnips and it would be great. My husband loved this stew. Thanks for a GREAT recipe!

So good! I did dredge them in seasoned flour before dipping them in the egg wash like other reviewers suggested. I also sliced my garlic. This recipe was very good. Family loved them! Thanks for a great recipe! And I did not find them greasy.

Chocolate Peanut Butter Cups

Reviewed: Jan. 17, 2011
Yum! These are so good and really very easy to make. The inside is a little soft. I think next time I will add a little more powder sugar. We made some with white chocolate also. Very good. Drizzle melted chocolate (contrasting) on top or sprinkle with chopped peanuts. Very pretty. I used mini muffin tins and parfait paper liners. They turned out nicly and tasted good too!

Baked Lemon Chicken with Mushroom Sauce

Reviewed: Apr. 19, 2011
This is so good! I did change it up a little, but it would have been good the way it was written. So, still 5 stars! I sprinkled the chicken with lemon zest, sqeezed on lemon juice, added a sprig of rosemary then topped with a lemon slice. I also topped with sliced onion and green pepper. For the sauce, I added some pressed garlic, lemon zest, very little lemon juice and salt and pepper. I also added some white wine and reduced it a little. I used boulion instead of broth (sodium free), added 1 1/2 T flour to thicken then added 1 cup of milk to make a creamy sauce. My family loved this! My husband does not like chicken breast and he loved this. The chicken was so juicy and flavorful. I served this with pasta. Rice would have been good too. I will definatly make this again! Next time I am going to try marinating the chicken in lemon juice, rosemary and EVOO.

Mushroom Lentil Barley Stew

Reviewed: Mar. 23, 2010
I thought this recipe had too much pepper. I even halved it and still found it too peppery for my taste. Otherwise it was good. I did use only baby bella mushrooms. This is a very thick stew and I think I will add a little extra broth next time (along with less pepper).

Curry Pumpkin Soup

Reviewed: Dec. 17, 2009
I didn't care for this. As a matter of fact, we didn't eat it. It could very well have been my choice of curry. I think maybe if I would have used a sweet curry I would have liked it better. I found it too spicy for me and not the comforting soup I was looking forward to.

Savory Slow Cooker Squash and Apple Dish

Reviewed: Jan. 17, 2011
We almost liked this recipe. With a few changes I think it would be good. Start by reducing the cinnamon A LOT! Maybe only 1/2 tsp and reduce the nutmeg to 1/4 tsp. Then it would probably be good.
