Key Lime Pie VII

After several days, the lime zest actually brightens in flavor and improves this sugary depth of this easy pie, as does a fresh blueberry topping. I like the rich pudding texture that many reviewers complained about.

Chicken Puffs

This recipe is delicious as is, but also has other possibilities. Instead of butter, I mixed about a half cup of sour cream to chive and onion cream cheese, and added garlic, onion, and poultry seasoning. Sprayed with oil and sprinkled with sesame seeds before baking. The homestyle flavor is reminiscent of chicken pot pie so you could easily add carrots and peas, glaze the tops with rosemary jelly, or add cheese. Alternatively, to lighten it up, you could add chopped fresh basil or a few tablespoons of pesto sprinkle the tops with grated parmesan and serve it alongside a fresh marinara. You could also add cumin and chili powder and serve it with a cilantro cream sauce. Puff pastry would be divine as well. Substantial yet inexpensive protein for a party. Two chicken breasts yielded about 20 palm sized balls.

Sam's Famous Carrot Cake

I am ashamed to say my partner and I ate this whole cake in less than a week. It's perfect. As others suggested, we used the "Cream Cheese Icing II" recipe on this site to frost two rounds, but we could've used a tad more icing in the middle. Moist and dense. Drained the pineapple and the carrots, and plumped the raisins in their discarded juice. I also added cinnamon, nutmeg, and a touch of cardamon because we like spice. VERY GOOD!

Wisconsin Native's Beer Cheese Soup

Paired a nutty brown winter beer with sharp cheddar, and a squeeze of spicy brown mustard since I had no mustard powder. My family loved it. It is a little thin, but very rich, and yes, it does seem like you could more easily add the flour to sautéed veggies and only use one pot as others noted, but I appreciate someone taking the time to share a good recipe so I try to honor the original cook the first time I try a new recipe. Really easy to make, very filling. Slayed my family. My teen actually got all cozy after eating a big bowl and went horizontal right at the table, laid down across two dining chairs. My wife simply kinda went diagonal, resting on one elbow. I just drank the rest of the beer. Yum.

Carrot Rice

I added the carrots in long, thinly peeled ribbons near the end of the sauté, while the rice was all steamy. The dish would have been even better if I had cilantro on hand, but instead I added a sprinkle of frozen peas for color. This one's kinda special, ya'll. Give it a try.

Macadamia Nut Crusted Mahi Mahi

Getting a quality visually-appealing crust was a challenge. For presentation, I wound up sprinkling toasted macadamia and coconut over the finished filets. Used the freshest fish and the freshest fruit. OMG. I cook all the time. I think this was the best thing that I ever tasted from my own kitchen. The sauce is DEEEEEVINE.

Scalloped Corn III

Oddly, the crackers fluff up like a dense souffle. Because I am southern and its what we do... I added Velveeta (instead of milk), canned green chilis, half a jalapeño, and topped with a handful of cheddar. Baked until sides of my casserole browned up. Family loved it.
