Mediterranean Chickpea Salad

very refreshing and nice compliment to an Indian curry I made. I used basil and oregano for my spices since I do not have Goya seasoning available.

Disney's Ratatouille

Yum! I used tomato slices and an extra eggplant in place of the yellow squash. and stayed with 4 cloves of garlic. I was amazed at the flavor with the minimal seasonings. I made two dishes worth and barely had a helping left at the end of the meal with guests.

Apple Coffee Cake

Kids and guests loved this! I am overseas where sour cream is hard to find, but I used all vanilla yogurt and it turned out great! I used three apples for a double recipe, and it was a good amount, although I may try 4 next time.

Smoked Salmon Alfredo Sauce

This is with the recommendations of others to add garlic, white wine and lemon juice. I added about 1/8 cup white wine and half of a lemon. Very good flavor. I made the mistake of not noticing this was only for 4 servings and mixed in too many noodles, so it was a bit dry when I served it. I will make a double recipe next time for my family of 5.

Hot Chicken Salad II

Very good! the whole family (with picky kids) enjoyed it. I did take the recommendations of others and added some garlic, onion, and used fresh mushrooms. I love the crunch of the water chestnuts and may add some red pepper next time also. I also sprinkled some grated cheese on top. So 5* with changes!

Easy Chicken Marsala

Perhaps because I doubled the sauce, but the sauce was very runny. I think if I make it again I would add some flour to thicken the sauce a bit. The flavor was good, but not outstanding. Not sure I will make again.

Chocolate Billionaires

These have disappeared quickly every time I have made them this holiday season and been a big hit at Christmas cookie exchanges! I love "turtles" and these are a great homemade version. Just make sure to melt your chocolate on low - on my electric stove I turn off the heat after it has warmed up a bit.

Asparagus, Chicken, and Pecan Pasta

Delicious! I only used one bunch of asparagus this time, but next time I will go ahead and use two like the recipe calls for. Cayenne pepper on the side for people who like a little heat is a great option also.

Beginner Chicken and Dumplings

The flavor was good, but next time I will cut down considerably on the liquid (4 c. of water instead of 6.) It was very watery this way. I also added carrots and sugar snap peas.
