Blueberry Zucchini Bread

Reviewed: Sep. 25, 2013
These were awesome. Bought zucchini to add some different veggies to our diet. I followed tips by others and used half the measuresments for flour and added whole wheat flour and did the same with the sugar, using a little less thn half brown sugar. I also used frozen blueberries. I rinsed them a slightly mashed them to remove the excess juice. They smelled soooo good baking. My 4yr old son and I devoured ours while they were warm. He said they were better than my browies, which he loves!! My 12 yr old and husband loved them too. I'll tell them later that they had zucchini in them:) Thanks!!

Waffles I

Reviewed: Dec. 30, 2012
I've made this recipe twice and it is the one for me! Made for family brunch and everyone loved them. Made it as written with the exception of adding more sugar and 2tbsp of cinnamon. My son added chocolate chips to his while on waffle iron. The waffle are crispy on the outside, but soft and light on the inside. No more boxed mix for us!! Thanks for sharing...

Healthier Soft Oatmeal Cookies

Reviewed: Nov. 29, 2012
I really enjoy making healthy switches to some of my favorites. Oatmeal cookie have long been a favorite. I made this recipe for my son's class. They were a huge hit!! All the parents asked for the recipe. I used 1/2 raisins and 1/2 cranberries in stead of dates for the batch I took to his class. I added 1/4 c unsweetened coconut flakes and 2 tbsp of flaxseed and unsweetened applesauce to the batch I made for us. My family devoured them! This is definitely a KEEPER. Thanks for sharing.

Honey Lime Chicken Wings

Reviewed: Jun. 14, 2012
I make wings all the time, but had a taste for something different. I always broil mine, turning twice, until golden brown. The only change I made was to add a tablespoon of lemon juice. Once the wings were cooked, I put half of the sauce on them I baked 5mins more. Used the other half for dipping. We absolutely loved them. These will definitely be on the menu for my next gathering!!

Sally's Spinach Mashed Potatoes

Reviewed: Jan. 17, 2012
I make great mashed potatoes, but I wanted to jazz them up. Tried this recipe, not knowing if my husband would like it. I knew my sons would. To my suprise, he loved them. YAY!! The only changes I made were to add 1/2 c cream of mushroom soup, 1/4 cup of sour cream and I topped with freshed grated extra sharp cheese. My son takes his lunch to school and he told me he was hoping the potatoes were in his lunch today. Maybe tomorrow :-) Thanks Sally!

Classic Macaroni Salad

Reviewed: Jun. 13, 2011
I love macaroni salad, but wanted to jazz up my recipe. I tried this one and it was a huge hit at my cookout. My teenage nephews absoulutely loved it!! One even asked me to make it for his bday in February :-). Needless to say, this one is a keeper. I used roasted peppers, added eggs and relish, and I cut back on vinegar and sugar. DELISH!!!

Braised Balsamic Chicken

Reviewed: Jan. 15, 2010
Made this dish last night and it was delicious. The taste was a bit different from what we eat on a regular, but my husband and 8yr son really enjoyed it. I did tweak it tad. I decreased the balsamic vinegar and added a teaspoon of flour and water to thicken sauce a bit. I love to try new dishes and this one's a keeper. I will definitely make this one again.

Sour Cream Pound Cake

Reviewed: May 14, 2009
I made this cake this afternoon. It was my first bundt style cake. I doubled the recipe. I did lower the oven temp to 340 and cooked it for 1 1/2 hr. The cake has a good taste and is moist. Will make it again because it is such an easy recipe. I'm cooking in a new oven, so I'll have to make it and figure out the perfect for doubling it.
