Andrea's Pasta Fagioli

This soup was very good, I made it as posted the first time and thought that something was missing. The second time I made it, I sauted some pancetta in the pan first then followed the recipe as is except I split the water and 3 cups water and 2 cups chicken broth. This is a keeper for me.

Greek Chicken

I made this last night and it was fantastic. Cooking the chicken on the grill is key, I think you would lose something flavorwise if cooked this in the oven.

Hamburger Steak with Onions and Gravy

One word "FANTASTIC"! This was relatively easy to make and tasted excellent. I made it for company and everyone loved it. The only problem is there were no leftovers. I think next time I will add mushrooms to the gravy. Thank you for sharing.

Mexican Rice II

This was very good, I really enjoyed the flavor of the rice and it was super easy to make. The only addition I made was I added some diced red & green pepper and added with the onion. The cooking time is longer than 20-25 minutes though, it was more like 40-45.

Hearty Hamburger Soup

I made this soup for Friday night dinner and it was excellent. I didn't change the ingredients at all. The only thing I did differently was after browning the ground beef I took it out of the pot and poured out any grease. Then added a little bit of olive oil and sauted the carrots, onion, celery and garlic for about 5 minutes to soften. Then added back in the ground beef and the rest of the ingredients. I love making soups in the fall/winter and this one is a keeper. Thank you for sharing.

Guacamole

I have mafe this recipe several times already and it is fantastic. The only change I made was omitting the cayenne pepper and using diced jalapeno pepper instead. I think the diced tomatoes are the key to making this taste so good.

Smokey Tequila-Lime Marinade

I made this minus the liquid smoke as I did not have any and used fresh garlic vs. the powder. I used it on a pork tenderloin and it was very good. Thank you for the recipe!

White Chili I

This was a great recipe, I made the few recommended changes. I used 3 cloves of fresh garlic vs. the powdered. I added a palm full of chili powder. I used fresh cilantro vs. the dried and I took a second can of the cannellini beans and puree'd them in a blender with some chicken stock to thicken the chili. This was a fantastic recipe that I will be making many many times. Thank you.

Ranch Dressing II

This dressing is excellent, I can't stand fat free or reduced fat ranch dressings that you buy in the store. For this recipe I followed the suggestions of 1/2 cup each of sour cream (fat free), Mayonaise (Helmens light) and reduced fat buttermilk. I also used fresh parsley and chives instead of the dried. I find especially with the chives that the dried version does not have very much flavor. So I finely chopped four chives and added to the mixture. I also added a couple of TBLs of skim milk to thin out the dressing. I have made this recipe three times already, I will never buy ranch dressing in the store again!!

Pork Tenderloin Diane

I just made this dish for dinner tonight and it was excellent. I did add a few things to the sauce thought. First, I sauted 3 minced shallots and 2 cloves of garlic in the pan after cooking the pork. Then I de-glazed the pan with some white wine and let cook for a couple of minutes to reduce. Then added the rest of the listed ingredients listed. This was a very easy recipe to make and it tastes great! It is a keeper.

World's Best Lasagna

This was one great lasagna!! I made it for my Christmas Eve dinner and everyone loved it. The only thing I did differently was I used 1 14 oz can of fire roasted diced tomatoes instead of the 2 cans of tomato sauce and skipped the sugar.

Spinach Pomegranate Salad

This salad was excellent, I made it to go along with our Christmas Eve dinner. For the vinagirette I used juice and zest from a half a lemon, 3 TBL of red wine vinegar, 1 TBL of honey and 3 TBL of olive oil. Seeding the pomegranate was pretty easy. I just quartered it and then inverted each quarter and the seeds easily popped out. Everyone loved it.

Chicken Tortilla Soup I

This soup was very good. I made a few changes though. When I make this soup I roast a whole chicken the night before and use the leftovers in this soup. I just add the chicken the last 10 minutes of cooking. I also add: 1 tsp of cumin 2 Tbl of chili powder instead of 2 tsp 2 14.5 oz cans of fire roasted diced tomatoes 1 14.5 oz can of spicy re-fried beans 3.5 cups of chicken broth/stock (I don't add the water)

Sage Pork Chops

This was a pretty good recipe, I used herbs de' provance instead of the sage as I didn't have any. I also used a beef broth instead of the bullion as I find it too salty. I made a reux first with some flour and butter before adding the beef broth to thicken the sauce. The pork chops were very flavorfull and juicy.

Souvlaki

I made this for dinner last night for my family and my in-laws. It was a big hit and even my daughter liked it and she is a picky eater. I marinated the pork and veggies over night and then cooked everything in the over for an hour. I look forward to redoing this recipe and cooking it on the grill when the weather gets nicer.

Chocolate Eclair Squares

This was a great recipe and very easy to make. I only used 1 box of pudding though as I thought that using two with only two cups of milk was a typo. I also used the pudding that you cook over the stove vs. the instant as I like the one you make yourself better. I will definately make this recipe again.

Hot Dog Soup

We had something similar to this growing up. Our version was: Saute the onion along with a diced green pepper and the cut up hotdogs in a pan until the vegtables softened and the hotdogs got some carmelization. Then add the can of tomato sauce, a little worcestershire sauce, some garlic powder and some red pepper flakes. Let it cook for about 20-30 minutes and you are good to go. Great served with either rice or mashed potatoes and a veggie.
