Oatmeal Peanut Butter Cookies III

I just made these with my sister. She loves oatmeal cookies and I love peanut butter, so these were a perfect compromise! They only needed 7 minutes in our oven. I doubled the recipe as previous commenters suggested, but wish I hadn't. These are very filling, so one at a time is plenty. The icing is really good. This is a great cookie if you want moist oatmeal cookie with just enough peanut butter taste. We'll make these again.

Boterkoek (Dutch Butter Cake)

This was good, and very easy to make. As suggested by previous reviewers, the amount of almond extract is too much. Next time I will use half a tablespoon or less. I replaced some of the flour with ground almonds and added 1/2 tsp. vanilla extract. I also did not glaze.

Eileen's Spicy Gingerbread Men

My sister and I made these tonight. Following one suggestion, we added 3/4 cup brown sugar in place of the white sugar. We added a pinch of extra cinnamon, since we both love it. I think they turned out wonderfully! We did not add cloves. At 8 minutes on a light-coloured pan they were firm, well-cooked, and chewy. Gingerbread perfection! We'll definitely be making these again. :-)

Downeast Maine Pumpkin Bread

Mmmm! I had some leftover pumpkin from making "Pumpkin Turkey Chili" from this site, and I wanted to make muffins- so I made them out of this recipe! I added a few chocolate chips and vanilla extract, but otherwise followed the recipe. The muffins were ready after 35 minutes, but next time I will leave them in for the full 40. Excellent and original treat!

Pumpkin Turkey Chili

This recipe is simply amazing! I added corn and used only one can of pumpkin puree, but other than that I followed it as stated. It was wonderful. It was easy to make, and all of the flavours went so well together (I highly recommend adding corn- I put it in with the pumpkin and tomatoes). I'm looking forward to the leftovers! I will be making this many times.

Actually Delicious Turkey Burgers

My sister and I made these for dinner tonight, and they were really good. We left out the onion, added about 2 tbsp. worcestershire sauce, ketchup, mustard, and a few red pepper flakes. Before cooking, we added a light dusting of flour. They turned out really moist, but were quite thick. Next time we'll be using more red pepper flakes and make them thinner. A quick tasty meal, and much better than ground beef.

Spanish Rice Bake

I've made this quite a few times now, and it's always turned out well. It's even better the next day. I've found that by omitting the cumin, cilantro and brown sugar works best for my tastes, but if you use brown sugar I advise using less than called for. This applies to chile sauce as well. Otherwise, this recipe makes a great meal.

Chocolate Truffle Cookies

My sister and I make these cookies all the time! You really can't go wrong with this recipe, and they always turn out great. The only changes I make is omitting the salt, heating all chocolate using the microwave, and I don't chill the dough.
