Soft Oatmeal Cookies

Mini Cheesecakes I

Thought these were really good, First time i had made anything like cheesecake before and had a difficult time telling when they were done. I also crushed all the wafers in the bottom.

Chocolate Chocolate Chip Cookies I

I thought these turned out really good however, the dough is very dense and became really hard to stir when i was trying to add the chocolate chips. I had followed the recipe exactly so i'm not sure what was with the consistency. you HAVE to take these out of the oven while they are still not fully cooked (8 min) or they will be over cooked. I baked on waxed paper and just removed whole sheet to drying rack (had to leave on wax paper or would have melted through the rack, as the first batch did). After a few mins on the paper i removed it and finished cooling on the racks.

Black Bean Quesadillas

This is a great quick dish. Made using sundried tomato quesadilla shell, cheddar cheese, whole kernel corn and a mix of black and pinto beans! Baked for 9 min at 400. great for a college kid as all ingredients are cheap!

Peanut Butter Cup Cookies

These were delicious! I used hershy kisses instead of peanut butter cups. I did not get anywhere near 40 cookies though, they would have been tiny. Took out of the oven at 8 min and they were perfect.

Pumpkin Flax Quickbread

Oatmeal Whole Wheat Quick Bread

I made this the other night for my first attempt at making bread, i thought it was delicious! I used vanilla soy milk because that is what i had on hand in place of the dairy milk. I used old fashioned oats (the kind i use with oatmeal) because that is also what was in the house. I did not double the recipe and bake in a regular bread pan like others had suggested because i did not want to waist any if it did not turn out good. I added a little maple syrup because my boyfriend has a huge sweet tooth and i was trying to help hide the taste of wheat flour. I also accidentally forgot to grease the pan i was using (I used a glass 9x12 i believe) and i did not really have a problem with it sticking at all. Will defiantly make this again!!

Joey's Peanut Butter Cookies

These were soo easy, not that cookies are normally hard. I used 3/4 cup brown sugar and 1/4 cup white sugar instead of half and half because i think it brings a nicer flavor to cookies. I used vanilla soy milk instead of dairy and doubled the vanilla. I also used all natural peanut butter, which i think may have added a little bit of oil to the cookies but im sure would taste just as good with regular cheap peanut butter, i might try chunky next time for a little bit of texture change. I baked them for 10 min at 350 on a dark pan with one of those silicone backing sheets (these make perfect cookies)!! I did not add any extra flower nor do anything to the fork and they did not stick to the fork or break around the edges like some others had problems with.

Slow Cooker Chicken and Dumplings

This was delicious! However we were making this for a dinner party and figured we would put the dough in for the biscuits shortly before the people were to arrive and it took them way longer than an hour to cook. I would recommend giving yourself AT LEAST AN HOUR for the biscuits. I think it only needs one can of dough as well. It defiantly needs spices added a few spices to taste. It was my first time making chicken and dumplings and my boyfriend had told me he loves the one his mother makes, he said this was just as good if not better and all our guests loved it once it was finally done; which unfortunately was closer to dessert than dinner.
