Moroccan Lentil Soup

I had only the cannellini beans, and I had to reduce the spices slightly to accommodate a few picky eaters, but this is a wonderful soup! I didn't puree it, since I like the bits and pieces, and the red lentils become so soft. I used a little chicken broth instead of plain water in my first batch. This is a keeper! Thank you.

Sweet Tamale Pie

Wonderful! I had to make changes based on what my family will eat. I won't bore anyone with the substitutions, but had to keep the spiciness at a minimum, and I don't buy mixes, so I used my homemade buttermilk cornbread recipe. All three generations loved it! Thanks for a terrific recipe!

Chicken Francesa

Oh, boy! This lovely chicken was served to three generations, and everyone said this recipe is a keeper. I was too lazy to pound the chicken, cutting the breasts in halves instead. The orange liqueur added another dimension I didn't expect. I forgot the lemons, but I'm sure they would have boosted the flavor even more. I served this with risotto on the side. I would be proud to serve this to company! Thank you for a terrific recipe!

Chia Coconut Pudding with Coconut Milk

Terrific! There are no empty calories from starch, so I didn't feel bad that the whole batch disappeared almost at once. We thought we might add a bit more vanilla for our taste, but this was wonderful. Thanks for the great recipe!

Turkey Corn Chowder

This was a good soup, though a little bland. I did substitute 1% milk for the cream due to diet restrictions, and had to add some thyme. A pinch of ground red pepper helped, too. This is a great way to use up leftover smoked turkey.

Dairy and Wheat Free Apple-Cinnamon Spelt Waffles

I've made these with and without the apple and cinnamon. They are loved by the whole family! I use either extra light olive oil or avocado oil for healthier, but neutral flavor.. Thanks for a terrific recipe.

Overnight Blueberry French Toast

The whole family enjoyed this with Christmas brunch. I made it as directed except making an extra half recipe of blueberry syrup, but I don't think it really needed it. It was very rich, so it served about 12 of us nicely with a little left over. Excellent recipe. Thanks.

Irish Lassie's Liver and Onions

I made this for my husband, and though I didn't try it, I have to give it the full 5 stars for his reaction. I had no peppers, nor did I have any mushrooms, but otherwise made this pretty much as is. I did follow a suggestion from years ago to soak the liver first in milk for about an hour. I did dredge the meat in flour seasoned with salt and pepper when frying, too. My husband really loved the gravy. I will make this again exactly as written. Thanks for a special dish!

Super Summer Kale Salad

Kale? Isn't that a nasty leafy green vegetable? But I just adored this salad! I wouldn't change a thing, though this recipe lends itself well to using what you have on hand. I did cut the sugar down a smidgen the second time I made it, but it's wonderful as is. The organic market deli sold a very similar salad for about $1000/pound, but we can make it much less expensively. Do try this, even if you don't think you like kale.

Mashed Potato, Rutabaga, and Parsnip Casserole with Caramelized Onions

I would proudly serve this at Thanksgiving! Rutabagas are nearly forgotten, it seems. I don't think about them often, even though I like them. The store had no parsnips, so I omitted them, but the seasonings were so perfect, I was able to lower the salt for my husband's diet without sacrificing flavor. I cooked the onions in avocado oil instead of butter. I will cook this often with my family's blessings! Thank you for a great dish!

Jalapeno Popper Spread

I think it's fair to rate this, even though I made some minor changes. I followed the advice of a couple of other reviewers and used 6 (picked right from the garden!) jalapeños, chopped and mostly seeded. I also melted about 2 TBS butter, which I mixed with about 1/2 cup panko crumbs and the fresh Parmesan, and then topped the cheese mixture with the buttery crumb mixture. I baked the dish at 375 F for about 20 minutes, or until golden brown and heated through. I only had Ritz crackers, but we could hardly stop ourselves from finishing the whole plate in one sitting! Thanks for an easy, marvelous recipe!

Spicy Refrigerator Dill Pickles

This will be my new refrigerator dill pickle recipe! I did follow other reviewers' advice and cut the sugar in half. I doubled the amount of red pepper flakes, since my family prefers the heat. I did not add additional sprigs of dill to the jars, and we all found the chopped dill to be more than enough for a full dill flavor. Wonderful pickles! Thanks for the great recipe! I wish I had made a double batch!

Catherine's Pickled Blueberries

I followed the recipe exactly for the first time. I followed the timing, but found the sauce rather thin. Next time, I will probably boil the sauce longer to thicken it more, since I wasn't sure how thick it was supposed to be. The flavor was very good, but my family, who usually like this sort of thing, said that I didn't necessarily need to make it again. I think I will try it again, but may add some sort of spicy element and will thicken it a bit more so it isn't as runny. Cooking times always vary a bit, and now I know what to aim for. Thanks for a very good recipe!

Jan's Jalapeno Popper Pizza

I followed this exactly, so that I might judge the recipe for itself. The flavor was good. I think this might be best on a thin crust, as the thicker crust overwhelmed the toppings a bit. I used home-grown jalapenos, which may have been milder than others, but we found the flavor needed just a little more of a boost. I will be making this again, but will double the bacon and jalapenos next time. Great idea for a great pizza! Thanks for the recipe!

Slow Cooker Carnitas

There are already so many terrific reviews, so I'll just agree with them. I did use a pork loin, trimmed of excess fat, as that is what I had on hand. We ate this alone and in burritos, and it was a huge hit with the family. We'll make this over and over. Great, simple recipe!

Double Crust Stuffed Pizza

Except for the crust, this recipe reminds me a bit of the Pizzeria Uno's pizza I had years ago. I used home-canned tomatoes (16 oz. that I cooked down) and fresh garlic, added a little oregano, and I did omit the sugar. I didn't wait the full 15 minutes of resting after cooking, which is probably what made the crust difficult to remove from the springform pan; the pieces I cut a little later came out without difficulty. Thank you for a very good recipe that my family has already requested again.

Amazing Pecan Coffee Cake

Get the coffee ready! You just can't beat this simple, tasty, moist cake! My family asked for it again as soon as the first batch was gone. I used buttermilk in place of the sour cream, but it still turned out well. Thanks for this great recipe. I've been searching for this one!
