Homesteader Cornbread
I just took a pan of this delicious cornbread out of my oven and I can tell you this....it's wonderful! A teensy-weensy corner seems to be missing. *shrugs* It's just me living here so I halved the recipe and baked it in an 8 x 8 pan. I used the suggestion to swtich around the cornmeal and flour amounts but I have a feeling I could have left it as the original recipe was written because I used freshly stone-ground cornmeal from a store here in the Smoky Mountains. The cornbread has a nicely raised dome in the center, very moist, and a cake-like texture. This will definately be the only cornbread recipe for me from now on. (almost the whole row is gone now since I started this review....*embarrassed to admit that*) ;0

Perfect Apple Pie
I am 63 years old and have never made an apple pie without using the canned fruit pie filling. I had 4 small Granny Smith and 2 large Jonathon apples on hand that needed to be used so I made the pie with those. I followed the recipe exactly as originally posted, except I did use 1/4 cup brown sugar and 1/2 cup of white sugar, because I love the flavor of brown sugar. I also sprinkled some cinnamon/sugar on the top after giving it a light milk wash. This pie is fabulous and I highly recommend it to even the novice cook. I doubt I will ever make an apple pie again without using this recipe.
