Health Nut Blueberry Muffins

Reviewed: Feb. 21, 2012
Like so many others have said, these are amazing! Per the previous reviewer's suggestions, I substituted 1/2 apple sauce instead of the bananas, and added cinnamon and nutmeg. I also omitted the oil and used soy milk instead of buttermilk. Finally, I didn't have oat bran, so I substituted ground flax. I was skeptical that the instructions didn't say to grease the pan or anything, but these easily slid out once cooled. They are the perfect combination of soft and chewy! This one is definitely a keeper. :)

Peanut Butter Noodles

Reviewed: Jan. 18, 2012
This is really good! And a very flexible recipe. I used vegan "chicken" bullion instead of chicken broth, and soy nut butter instead of peanut butter and it still turned out amazing! The sauce is a good base to which you can add anything like sprouts, lime, red peppers, tofu, shredded carrots, etc. Super quick to make using ingredients most people have on hand. Will definitely make this again.

Seminary Muffins

Reviewed: Oct. 17, 2010
I can't believe these are healthy! As another reviewer said, the use of applesauce in this recipe for some reason does not yield a gooey result, the muffins are moist yet fluffy. I didn't have chocolate chips on hand, so I skipped that. I also added wheat germ and ground flax seed for that extra healthy boost.

Creamy Chicken and Wild Rice Soup

Reviewed: Oct. 13, 2010
This review is for the very modified version of the recipe as posted by naples31402. Changes made to the original recipe were that I didn't have a season packet with the wild rice, but rather sauteed maple turkey bacon, a big portabello mushroom, celery, garlic and onion and added it to the soup along with a little bit of dried parsley. I also wanted to add the white wine to bring out the flavors, but all I had was cheap champagne which still worked GREAT. Made this way, it was probably the BEST soup I've ever had. Awesome served with french bread. :)

A Surprise-Inside French Toast

Reviewed: Oct. 3, 2010
This was FANTASTIC. I used Challah bread instead of french bread, and half and half instead of the evaporated milk. Served with fresh raspberries, this is better than most anything you could get at a restaurant. Perfecto! :)

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

Reviewed: Sep. 20, 2010
This was such an amazing combination of flavors! To make things a little easier, I skipped breading the fish myself, and just used beer battered frozen fish fillets. Also, for the chipotle mayo, I just used some San Marcos Chipotle salsa and mixed it in with the mayo. Overall, very easy and very impressive! Would be great with avocado.

Chicken Pot Pie IX

Reviewed: Oct. 9, 2009
Holy cow this was good! I did change a few things to make it a little easier, and based on some things I had on hand. Instead of using chicken broth with the flour and all that, I just used a can of cream of chicken soup. I added some mushrooms also.

Banana-Zucchini Bread

Reviewed: Oct. 9, 2009
Delicious! Moist! Healthy! I, like others replaced the oil with applesauce and doubled the zucchini. This is going to be great for breakfast tomorrow!

Angel's Old Fashioned Beef Stew

Reviewed: Sep. 28, 2009
Wonderful aroma while simmering! Upon others suggestion, I added a splash of worcesire (sp?) sauce, some rosemary, thyme, bay leaves, garlic, and a big tomato. I'm not usually a fan of anything with meat in it, but the meat in this came out so tender and flavorful, it was a hit! Will definitely make again. :)(Would give it the extra star, but without the added spices, I think it may have come out a bit bland)

Terrific Turkey Chili

Reviewed: Aug. 11, 2009
Considering that I'm not usually a huge fan of chili, this was TO DIE FOR!!! All I've eaten for the last two days is this chili, I can't get enough of it. I also made a few changes. I added some chili powder (about 1/2 tablespoon), some portobello mushrooms (I happened to have some that were going bad and decided to throw them in) and about a tablespoon of chopped garlic. I also added a can of kidney beans with their liquid, and a whole can of tomato paste instead of just a tablespoon. I didn't have chile peppers so I added one jalapeno. All together, it's absolutely amazing. I don't doubt it's just as amazing without my adjustments, I just had a few extras laying around I needed to use up, so I threw them in. Will definitely make again! Thanks!

Curried Coconut Chicken

Reviewed: May 14, 2009
I signed up for allrecipes just so I could review this! Of several recipes that I've made from this site, this one has been the BEST! I did add a few things that I had laying around, and it added a nice texture to the sauce. I added sliced carrots, diced potato, peas, and broccoli. I will absolutely be making this several more times! Yummm! :)
