Health Nut Blueberry Muffins
Like so many others have said, these are amazing! Per the previous reviewer's suggestions, I substituted 1/2 apple sauce instead of the bananas, and added cinnamon and nutmeg. I also omitted the oil and used soy milk instead of buttermilk. Finally, I didn't have oat bran, so I substituted ground flax. I was skeptical that the instructions didn't say to grease the pan or anything, but these easily slid out once cooled. They are the perfect combination of soft and chewy! This one is definitely a keeper. :)

Peanut Butter Noodles
This is really good! And a very flexible recipe. I used vegan "chicken" bullion instead of chicken broth, and soy nut butter instead of peanut butter and it still turned out amazing! The sauce is a good base to which you can add anything like sprouts, lime, red peppers, tofu, shredded carrots, etc. Super quick to make using ingredients most people have on hand. Will definitely make this again.

Seminary Muffins
I can't believe these are healthy! As another reviewer said, the use of applesauce in this recipe for some reason does not yield a gooey result, the muffins are moist yet fluffy. I didn't have chocolate chips on hand, so I skipped that. I also added wheat germ and ground flax seed for that extra healthy boost.
