Almost No Fat Banana Bread
I've had much better low fat banana bread in the past. I added 1 tsp vanilla, because every baking recipe needs vanilla. Even then, it was good, but kind of "meh". The texture is great, but I can taste the cinnamon too much and the banana flavour isn't quite strong enough. I think next time I'd add a little more banana, and probably use 1/2 white and 1/2 brown sugar to get a richer flavour without adding more fat.

Curry Pumpkin Soup
I'm rating medium because I know this can be so much better. my fiancee makes a soup similar to this, but it definitely uses coconut milk instead of cream, which is so much better for you, and fish sauce instead of soy sauce. both substitutes are actually oriental ingredients instead of americanized versions. also if you use a butternut squash you don't need to add the sugar as it's naturally sweeter than pumpkin.

Raspberry Lemon Muffins
I used mixed frozen berries, and used lime juice instead of lemon, substituting another tbsp of juice for the zest and omitting the extract. They came out excellent, fluffy and moist, just the right amount of sweet for a breakfast/snack muffin and all around delicious! I will definitely be making them again.
