Shredded Beef Enchiladas

Made this casserole-style for my young family and it was a huge hit! Layered flour tortillas, meat, sour cream mixture, repeat all, and then top with more cheese. Forgot to spray my pan so the bottom layer of tortilla stuck. I cooked my roast overnight in the crockpot and it was wonderfully tender by morning. Then I added the seasonings etc to the meat to let it flavorize. I kept the green chiles out since I'm the only one who likes them, but added them to mine and it was great. We will definately have this again!

Almond Rhubarb Coffee Cake

Very tasty, but very crumbly! I made in 2 9-inch round pans, and it was fragile after it cooled. Loved the sugared almonds on top!

Zucchini Patties

I am terrible when it comes to frying things...I just don't have the knack. So, after trying a few and wrecking them, I decided to pour the whole gosh darn mixture (I doubled it) into my pan, and cooked it. The result was like a yummy, creamy, veggie mashed potato dish (without the potatoes!) I would have loved the crunch of the cakes, but the mix was enjoyed by adults and kids alike, the way I ended up.

Scallops with White Wine Sauce II

Excellent! I didn't have wine, so used more chix broth instead. Same with scallions, so more garlic. I thought the sauce could still have been just as delicious with less butter. Served on veggie pasta. YUM.

Fruit Pizza II

Have made many fruit pizzas, and this is the best. Loved the glaze. I was 1 T short on lemon juice (I doubled the recipe) and it was still great. I pulled my cookie crust out at 12 minutes and didn't think it was done. Turned the oven back on and stuck it back in about another 5, and it was perfect. Chewy and delicious! I used blueberries, strawberries, kiwi, grapes, and nectarines. With doubling the glaze recipe, I had left overs, so saving that for something else.

Didn't have 5 spice powder or red pepper flakes. Without, this tasted not exactly asian, more of a tangy barbecue. My kids loved it!

I didn't have tamarind pulp or radish, so made without. It was tame, but good. I added a pound of cooked shrimp about 2 minutes before serving, just to warm them up. (no tofu)

Whole Grain Waffles

Excellent! I doubled the recipe, but soon found out I didn't have enough baking powder. I looked online for substitutions and found that 1 tsp powder can be subbed for 1/4 powder and 1/3 cup molasses. I tried that, and it is wonderful! I also used part milk and part dry nonfat milk with water. Very tasty and wholesome!

German Spaetzle Dumplings

We love these...especially after they have been sauteed in the butter! I put my batter into a ziplock and squeeze out the dumplings. They are probably larger than traditional spaetzle this way, but they work well for our family.

Chicken or Turkey Crepes with Tarragon

I served this on Christmas day. I was looking for something different. I lilked the fact that I could do the crepes a couple days ahead, and then refrigerate them until I used them. This was a good dish...not a WOW dish, but a good one.
