Caribbean Fish With Mango Salsa

Used monk fish and followed the recipe exactly. Turned out very good but ended up with a lot of the salsa left over. No worries though... it goes with lots of other stuff.

Another winner in my opinion. You do have to be nutty about the cooking time however. No more than 3 or 4 minutes if you want tender Halibut.

Just excellent... The chicken was so tender that it was hard to lift it out of the cooker in one piece. The taste was fantastic. I will make this again for sure. Followed the recipe exactly.

Chicken Tagine

Excellent flavour ! Added a little Cayenne and some Morrocan spice and everyone loved it. They even liked the couscous which I hadn't made before but it went very well with this dish. Cooked it on high for 4 hours and that was definitely long enough. Next time I'll add the egg plant near the end as it of course turned to mush after 4 hours.

Excellent! Used Tenderloin and cooked a little less also I marinated the pork in the Sauce for a couple of hours in a vacumn marinator. Wow !

Slow Cooker Tipsy Chicken

We enjoyed this quite a bit. I added lots of herbs and spices however as I found it a bit bland. The olives are a nice touch. Also a bit runny but hey that's why we made rice with it.
