Homemade Black Bean Veggie Burgers

I thought these were lovely! The day I had planned to make them, I was also cooking red kidney beans. Because they were handy, I used them instead of the black bean. I also took the advice of a review, and froze the patty before grilling.

Sunday Afternoon Slow-Cooked Spare Ribs

Amazing! First, I loved the title, "Sunday afternoon..." I had beef ribs instead of pork, I think either one would of been just fine. I only had half a lemon, so after squeezing out the juice, I through the rest of lemon in with sauce and ribs. This dish barley made it to the table, the smell throughout the house was epic!

Slow Cooker Carnitas

oh my goodness, wonderful! i doubled the spices and also cut my chunk of meat up into three pieces. i also called the local mexican restaurant and ordered handmade corn tortillas! YUMMY!

Ranch Dressing II

instead of using sourcream, i used plain greek yogurt. i also used a little milk to thin it out. dried parsley, oregeno, dried garlic, and cayenne pepper. salt and pepper to taste. i ended up eating the rest of it with raw veggies...yummy!

Chicken and Dumplings IV

I had turkey in the freezer, I used that instead of chicken. I also added carrot and peas. I modified the dumplings a bit, by adding fresh parsley and baking powder. This was delish!

Dynamite Halibut

yummy! the few modifications i made were this: i sauteed the onion and mushroom before adding it to the white sauce. i also cut the mayo in half and substituted low fat greek plain yogurt. it was delish, the family also agreed!

Grilled Salmon I

oh my goodness! i am not the biggest fan of salmon, but this recipe has changed that! i used agave instead of the brown sugar. i also seared the fish for about a minuet each side, and then baked it for 20 min in a 400 degree oven. yummy~

Tender Pork Spare Ribs

love, love, love! i did not have a rack of ribs, just three good size chunks of meat. it fell apart to the touch! the whole family loved it...even the little being growing inside my belly!

Tomato-Cream Sauce for Pasta

delish! i did do a few changes...i added veggies, mushrooms, baby bells, and kale. i did not have heavy cream, and did not feel like going to the store; so i used about half a cup of low fat sour cream, about half a cup of 1% milk, and about two Tbs of butter. yum, yum, YUM! my son does not usually like red sauces, this one he did!

Chewy Chocolate Chip Oatmeal Cookies

yummy! these were delicious! i did not have quick cooking oats; i had the old fashion oatmeal. they worked just fine. my first batch came out flat, but the rest of them were perfect?! not sure what i did differently. yum, yum, yum!

Pan-fried Polenta with Corn, Kale and Goat Cheese

oh lala! this was yummy! i did make a few changes...i had the 'tube' of polenta, i just sliced that up and cooked it in the olive oil with some dried basil, dried rosemary, and garlic. i did not have fresh tomato's, so i used a can of tomato's and a can of corn. placed both on top of polenta and smothered it with the goat cheese. of course, i put over the bed of kale that i sauteed up. i did not use any water, just a little oil. the whole family loved this dish~

French Toast Bake

amazing! this is such a great breakfast if you have a house full of guests. prepare it the night before, and WALA! you have a tasty and hassle free meal! the fresh fruit is a must, and some homemade whip cream is a nice topper!

Broccoli Chicken Fettuccini Alfredo

it kind of reminded me of my mother's version of beef stroganoff, with a few changes. i did not use chicken, instead i added mushrooms, yellow onion and fresh garlic. i had it over linguine pasta. topped it with a little more parm and fresh parsley. pretty tasty~

loved it! i made it for st patty's day. i added cabbage to it and it was delish! i used more seasonings; curry, cumin, and some dried herbs. i also used half green split peas. put in the crock pot and WALA!

Easy and Delicious Chicken

i was gone all day, so i kept it on low for almost 10 hours! it was still tasty! i had my husband add fresh green beans about 1 1/2 hours before we ate. they were still a bit crunchy, i like them that way! i also had baby portabellas in with the chicken. i forgot the cream cheese, and only used 1/2 cup of dressing. served it over penne pasta~

Chicken Enchiladas with Creamy Green Chile Sauce

i did this a bit different and a bit more healthy! i added some fresh kale and garlic in with my onions. and instead of using sour cream i used nonfat plain yogurt. i also use mozzarella cheese. (it was what i had, and a little healthier) very tasty!
