Thousand Island Dressing

I'm not sure I would call this thousand island dressing but we really enjoyed it. On the thick side and a little spicy. I only buy it for reubens and then the rest goes to waste. This is perfect for us since I always have these three ingredients in the house and we always enjoy a little kick in our sauces.

Roasted Spicy Salsa Verde

We found the onion and garlic to be overpowering and did not enjoy this as a dip but we did like the flavor it added to our burritos. My poblanos were on the small side but are usually pretty hot so I didn't want to add another. The tomatillos were also small so I added a couple extras. I will try this again because I like the roasted flavor but I will probably reduce the onion or add it at the end rather than first so they don't get as pulverized. I tried to make it smoother so they may have released too much juices. SAFETY NOTE: One of my tomatillos burst on the grill and squirted hot juice at me.EDIT2/17/10 made again but minced onion & garlic by hand and added at end with much better results. BTW the red is an extra ripe pepper, nothing mysterious.

Guinness® and Chocolate Cheesecake

This was delicious. I didn't use the cookie crust or decorate it so I'm just rating the cake. The texture was a little too moist/airy for my preference but it held together well and I got nothing but compliments. My batter was not as runny as some experienced, but the cake was quite jiggly after the recommended time, puffed up to double it's final size while cooking and then fell in. I'm not sure if it was the beer, using the mixer, or the egg(I usually use less than a recipe calls for due to allergies). I will definitely use this recipe again but I will reduce the eggs and hand mix the batter as I normally do. Thanks for the yummy dessert.

Grilled Tequila-Cilantro Pineapple

I made this as written and it was pretty good. I thought it held the spice more than it did the rest of the marinade. It was so simple and interesting that I want to make the sauce next time and try using that and the pineapple as the base for a main dish. Edit 2/6/13: I ran out of chipotle and had to sub for half with ancho chile powder. I think I preferred it like this. Regardless, we really enjoy this recipe.

Peppery Sweet Potato Soup

I really wanted to like this more than I did. Never had a soup of this texture before and that would probably keep me from making it again as written. However, I am going to experiment with the leftovers because the flavor was very good and it's very easy to make. Thanks for the idea.

Green Hot Sauce (Salsa Verde)

This was very good and quite easy. I cook almost everything on the grill so I tried this in a skillet over med-hi heat and it worked good but not hot enough to cook off the liquid. I split it up into three portions and tried it 1.as written, 2.with some cilantro and lime, and 3.mixed with some sour cream for a wet burrito "gravy". I used 4 big serranos and it was just right for me and lacking a little heat for my husband. This'll be my 'go to' recipe, thanks.

Tuscan Soup

This was excellent. My new favorite soup. The only real change I made was additional evap. milk and kept simmering while waiting for everyone else to get a little thicker soup. Because of that I added the spinach last to prevent it from cooking down too much. I used canned potatoes and it hid their canniness well. I also used hot sausage(chicken) as stated and don't think it would have been as good with mild. The spinach got a little extra cooked when reheating so if I make it to freeze I will leave that out and add it when reheating. And next time I'm adding red peppers for color. YUM!

Cinnamon Roll Cheesecake

LadySparkle, I apologize for some of my changes but they're due to allergies and diabetic concerns. Nonetheless, I had to make this and it was deeelicious. I made the full recipe w/o frosting. I used egg whites (only 1/2 the amt in the cheesecake) and split it between 5" & 7" pans. It barely oozed over the small one while baking but otherwise worked fine. I took out the 5" after 45 min but the 7" worked at the 55 min mark. Froze the bigger one for Mother's Day and I can't wait for more. Thanks for the recipe and the help!

Mexican Pesto

I've made this twice and the only change was to not use the full amount of oil so I wouldn't feel bad eating it all in one sitting. First time I topped blackened chicken breast,pasta and halved cherry tomatoes with this for a very easy and yummy meal. The second time my father ate most of the batch himself on tortilla chips after saying he didn't like cilantro. Very good!

Marinara Sauce

I have several sauce recipes that we like but I was looking for a basic marinara. I used fresh ugly ripes, homemade wine and basil from my garden. I halved the sugar because the tomatoes were very sweet and didn't measure the oil but probably used a little less. After sauteing, I added the wine to the garlic and reduced it by about half before combining everything. I then simmered over an hour uncovered because we like a thicker consistency. I'll be making a quite a bit of this for canning. Thanks Eleanor!

Great On The Lips, But Easy On The Hips- Spicy Chipotle Black Bean Dip

This is so good. All I could find was chipotles in adobe so I pureed that for the chipotle sauce. I only put in 2 TBL because apparently I'm a lightweight. I used a med-hot salsa also. We used it both on chips and wrapped in corn tortillas with cheese and rajas. It's addicting.

California Chicken

I marinated the chicken for a couple of hours in tequila,lime juice,rice vinegar and minced onion but didn't otherwise change any ingredients. To save on the mess and heat I added the cheese and tomato to the chicken in the skillet and covered on low until the cheese melted. This was very good and a simple meal with some Lime Cilantro Rice.

Lime Cilantro Rice

I made this to go with California Chicken and wasn't disappointed. Very fresh tasting and healthy. I did use brown rice because that's all I ever have on hand. I zested twise as much lime by accident so I just threw it in anyway. It was still quite good but probably will be better with the amount as written.

I really like this and have made it twice. The first time I made it I had to sub sour cream for the crema and put it in burritos with chicken and extra cheese. The 2nd time I had crema and thought it was noticeably better. I never use cream but it was still very creamy and I don't miss the richness that it probably adds. I wrapped in warm corn tortillas with cheese and/or Christina's black bean dip. They were all yummy.

I was surprised how much we liked this. I'm not a big beef eater so I don't try too many new things with it but I'm so glad I tried this. I didn't simmer it nearly as long as stated but it was still tender and thickened up nicely.

Best Carolina BBQ Meat Sauce

Exactly what I was looking for! Mustard is our favorite condiment and vinegar and hot sauce rank pretty high as well. I didn't have any liquid smoke but I do now and will definitely use it next time. Otherwise made exactly as written. We charcoal grilled pork, shredded it and made sliders.

Exquisite Pizza Sauce

Really enjoyed the flavor and this will be my new recipe. I think I would cut back on the honey next time due to personal preference. Same thing with the pepper flakes. I like that kick occasionally but don't prefer it on a regular basis. My husband does but he can add it to the pie :)
