Ruth's Grandma's Pie Crust

I used this recipe to make my very first pie (chicken pot pie) and was amazed at how easy it was to make. I shamefully admit that while the innards didn't taste very good, I would actually pick off pieces of the crust and eat them. Thank you, Ruth's Grandma and Barbara for passing on this wonderful recipe! It has become my new go-to pie crust!

Grandmother's Buttermilk Cornbread

I just made this for the first time and no sooner had I removed it from the pan to the cooling rack, both of my children (ages 1 & 2) went off like car alarms. They gobbled up the warm sample pieces, meaning, this recipe gets their approval. I followed the recipe almost exactly, only melting my butter in the microwave instead of a pan and used Karen's suggestion of mixing 2 Tbsp lemon juice with milk since I didn't have buttermilk. I'm not sure why everyone says this is too sweet, because for me, it tasted fine, though if you're looking for a more prominent corn flavor that the box mixes have, this isn't the recipe you're looking for.

Tartar Sauce I

Good, simple and easy recipe. I chopped some sweet pickles to replace the relish and mixed in a little juice for that sweet zing flavor, and re-hydrated some dehydrated onion in the lemon juice instead since I was out of fresh onion.

All-Day Apple Butter

I made this for my dad as a Christmas present, spread it on some toast and it was good, though a little sweet (I used granny smith apples, which are pretty sweet on their own). The process of making it wasn't too labor intensive since the slow cooker does most of the work. The hardest part was chopping the apples, which can get pretty exhausting if you don't have a food processor.

Sugar Cookies

My cookies probably came out a little different than others since I read the recipe wrong (added two 1/4 cups of flour instead of 2 1/4- stupid me!) and the dough was really sticky, so I had to add handfuls of flour until it evened out enough for me to shape it. I chilled the flattened dough for about an hour or two to avoid another unfortunate melting accident that happened when I tried making snickerdoodles (better safe than sorry, I guess). Despite my botching of the recipe, the cookies came out pretty good in the end- kinda crunchy, but chewy in the middle, which is okay since my dad likes hard cookies and I like soft. He brought home sugar cookies from the store today, but they weren't nearly as good as these! I think I'll make these again sometime...the right way. :)

Veggie Burgers

Interesting! I never knew that you could make a meatless burger from oatmeal. This was good for me since the stores I shop at don't carry mock-meat products. Made up a "tester" version last week using what little ingredients we had in the house (just the carrots, onion, oats and soy), and it was surprisingly not bad! Although next time I'll have to add a little more seasoning and veggies to my burger since the tester came out a little bland. But I will definitely make this again!
