Old Fashioned Coconut Cream Pie

Fabulous! I made this for when my Dad came to visit. Both him and my husband LOVED it. Definitely toast the coconut. But why go through all that and then use frozen, high fructose charged whipped "cream" topping? Just make your own, SO simple! Dad later bragged to my sister that it was the best he had, and she had to have the recipe! Simple to make! I used 1/2 C whipping cream, 1/4 C sugar, 1 t vanilla. Whip til stiff peaks form, and top the pie. Perfect!

Lemon Garlic Tilapia

This was so easy, and so good! Took me just a few minutes to prepare, and in the oven it went! Plus, it's healthy! Best of both worlds, yummy and healthy :)

Best Pennsylvania Dutch Chicken Corn Soup

My husband and I are both from PA dutch country. My grandmother made it for me, and so did his. I've never had it with dumplings though, so we skipped that. And I thought the nutmeg was completely unnecessary, that didn't seem very "authentic" to us. All it needed was salt and pepper. We adjusted those to our personal tastes. I also used breast tenders because I try not to deal with whole chickens unless I have to (the backbone freaks me out, haha), and the tenders are cheaper than the breasts, but work great in a soup. Overall, very good!

Sarah's Applesauce

What I LOVED about this recipe, was how easy it was to make. I wound up making not quite double this recipe. However, I found it a *little* too sweet for me. I like my apple sauce to taste more natural than like I'm eating a carmel apple. If you like your apple sauce sweet, go for it! If you don't, back off on the sugar a little :) Otherwise, really great recipe. It'd be 5 stars if it did not have so much sugar!

Tartar Sauce I

This was just ok (fresh). It tasted a little like glorified mayo to me. Given, I'm not a big fan of mayo and I really made this for my husband. I did make some changes. I used about half the mayo, a little bit more of the relish, added a few dashes of garlic powder, skipped on the lemon (I was out), and added a few dashes of celery seed. I tried it while it was fresh, we'll see how it tastes tonight for dinner.

Hummus III

I gave this 3 stars because I made a few changes. 1/4 C of lemon juice seemed like a lot to me, so I just did 1/8 C, and added in an additional 2T of olive oil. It was still way too lemony for me. I wound up adding in another 2 C of garbanzo beans and it was still pretty strong for me. Added in 1/8C of onion, but it wound up being a bit much, but that's my fault. I'd just do a T instead I used smoked paprika (which I like better) instead of normal paprika. I didn't have parsley, but I used dried Rosemary instead (just a pinch) It came out alright, but I would definitely add a lot less lemon juice, maybe 1T if that, maybe 2t. Point being, I'd slowly add the lemon juice to avoid having a large batch of over-lemoned hummus.

Vegan Chocolate Cake

Oh, my. This recipe and I do not get along. I loved that this recipe was vegan, but it's just not happening. I've made this cake in cupcake form three different times, and each time they flop. I tried them back in February, and they were just for myself and my husband so it wasn't a big deal that they didn't come out perfect. However, trying to make them for a dinner party, it'd be nice if they wouldn't stick. I baked them in liners, and they just stuck to the liner. Totally inedible. Third time, I used my commercial baking pan, greased the individual cups, and they still stuck. I adjusted temperature, baking time, everything. Not sure if it has to do with the fact that I'm up 6,000 ft, but I don't have time to mess with it anymore. Tastes great, so maybe better for an actual cake. But cupcakes were a dud :-/

Brooke's Best Bombshell Brownies

I was very disappointed in this recipe. I doubled it to make for a treat for class of mine. They took forever to make, and I never felt like they were done. The second batch I made I left in the pan overnight. I went to cut them up in the morning and they were rock hard. I had a little bit of issues cutting them with a Wusthof knife! The ones in the middle were fudgy, but the ones from the night before were not presentable. About a 1/4 of the brownies turned out. Looked over the recipe and I followed it to the "t", won't be using again!

Lower Fat Fudge Brownies

These brownies, sadly, were not good at all. The texture was really rubbery, and the flavor was just not there (not chocolatey). Couldn't even tolerate them as low calorie.
