Sesame Crusted Mahi Mahi with Soy Shiso Ginger Butter Sauce

This sauce was great and although it sounds a little hard to do, it really isn't. I took some people's advice and the only changes I made was to add a little cornstarch thickener because it was a little runny, used basil instead of shiso, and I also added wasabi powder (I added 2 tbsp., but I like it spicy) and put it over seared tuna... AMAZING.

Broccoli Rice Casserole

I made the recipe exactly as is except for the following changes: omit the cream of chicken soup and celery and add a can of sliced mushrooms and a tsp. of minced garlic to the onion. I also added some season salt because reviews were saying it was too bland. I really enjoyed this dish with my changes! It was a huge hit for dinner with my family as well.

Roasted Garlic

I followed the directions most of the way. Cut the top off the garlic, drizzled with olive oil in a ramekin, but I baked it at 400 degrees for 20 mins and that seemed to do the trick! I had something else baking at that temperature and I gave it a whirl and it turned out great.

Crazy Crust Pizza Dough

Followed the instructions and recommendations of extra flour, 1 egg, and baking powder that others reviewed and it turned out great! I used chicken and a garlic white sauce with mozzarella and it was great.

Remoulade Sauce a la New Orleans

I didn't use the capers, and didn't notice. I served it with my old bay shrimp and potatoes and had excellent reviews! I threw the rest in with the leftover potatoes, added some sour cream and hard boiled egg, and voila! Excellent potato salad! :)

Chicken Enchilada Casserole II

I would definitely make this again! I used canned chicken instead of chicken breasts and black beans instead of chili beans and the results were wonderful. The bottom layer of tortillas was a little gummy, but all together fine. I used multi-grain tortillas.

Blueberry Zucchini Bread

Great recipe! Baked exactly as written except for 2 cups white sugar and 1/4 cup of brown sugar and made in muffin tins. 21 muffins, for 25 minutes.

Thai Chicken with Basil Stir Fry

I followed the recipe exactly, EXCEPT I added 2 tablespoons of red curry paste and a can of bamboo shoots and it was FANTASTIC! I like my recipes a little spicier and the curry paste definitely adds that and more flavor. I have read some reviews about skipping the fish sauce and I DO NOT recommend it. I started using fish sauce a couple of years ago and was amazed at the difference. Dishes I have made for years were better and other people noticed!
