Easy Chicken Enchiladas

I made this last night. I can only give 3 stars because I made changes and I liked it but my husband wasn't a huge fan. I added a can of corn and used enchilada sauce in place of salsa. I also added some onion, pepper, and garlic powder while cooking chicken and topped it off with enchilada sauce and added cheese during last 5 minutes of baking. It was pretty good but the flour tortillas just get mushy and fall apart in some spots and get hard and tough in others. I wonder if corn tortillas, lightly fried, would work better if covered completely with sauce and cheese. Overall I liked the filling and will probably try this again with a couple changes.

Tater Tot Casserole

I made this last night. The great thing about this dish is like shepherd's pie, there are infinite ways to make it your own. I made some changes. I did use the ketchup and worcestershire sauce (in fact I can't imagine how bland it would be without it!). I only had a family-size can of cream of mushroom soup and I used about 3/4 of it. I used dehydrated onion because my husband doesn't like to bit into pieces of onion. While cooking meat and onion I added in some black pepper and garlic salt. I added 3/4 can whole kernel corn and 3/4 can french cut green beans. I topped the beef/veggie mixture with shredded cheddar and topped it with wall-to-wall tater tots. I baked it for 35-40 minutes so the tater tots would get crispy. It was good but still "missing something" and a tad bland. My 5 year old and I topped it with some ketchup before eating and that was pretty good. I thought reheating would be bad because the tater tots wouldn't be crunchy but it was actually better! The flavors had time to get stronger and mix. I still had to top it with ketchup though. Next time I will double up on the ketchup and worcestershire sauce and maybe add some more spices. Also, my husband suggested a "man's" tater tot casserole with crisp, crumbled bacon and BBQ sauce instead of ketchup and maybe the SLIGHTEST drop of liquid smoke. Hmmmmm...he may be on to something!

Bananas Foster I

I used the changes "awesome in tummy" suggested but cut the brown sugar down some. I also cut my bananas in smaller pieces. Word to the wise...when you light the liqueur and carefully pour it in the banana mixture...it flames up A LOT. I poured over high quality vanilla bean ice cream (also great over cinnamon ice cream) and it was amazing. VERY rich. I had a lot left over so I put it in the fridge and the next morning I cut up two rolls of Grands cinnamon rolls into quarters, mixed with leftover bananas foster and baked as monkey bread. It was simply divine!

Creamy Strawberry Crepes

I did not use the crepe portion of this recipe as I prefer the vanilla crepe recipe but I used this filling and cut down powdered sugar to 1 cup and substituted bananas for strawberries. Was VERY rich but delicious!

Guy Approved Meatloaf

I used seasoned bread crumbs in place of crackers, used closer to a cup of BBQ sauce and put more on top under the bacon. I also used more seasonings (as I always do) and used dehydrated onion as I was out of fresh. My husband loves my meatloaf but he loved this as well. He said it was a pleasant change and said he would like this made again. I loved it as well. I served with mashed potatoes and whole kernel corn. Very good recipe!

Vanilla Crepes

I made these with a vanilla creme banana filling and they were amazing. VERY rich and sweet so my husband said he would prefer as a dessert and a little goes a long way. Successful though and will make again.

Apple Raisin French Toast Strata

I took other's suggestions and reduced eggs to 6, added some vanilla to eggs, added brown sugar, cinnamon and vanilla to the cream cheese and spread it on the slices of bread prior to cubing them and upped the oven temp to 350. My oven thermometer confirmed the temp of the oven so I know that was OK but even after 90 MINUTES in the oven this was just a soggy mush in the middle with the substance of tapioca. I can not imagine what it would have been like if I had used 8 eggs! I finally took it out and microwaved individual servings to get it to set up better. It was edible. After sitting for the 1/2 hour that we ate it set up a little more but not much. This got a unanimous 2-thumbs down from me, my husband, daughter, mother and 2-year old granddaughter who usually eats anything. I will definitely NOT be making this again. I would like to know how this ever came to look like the picture as I made it as listed but with LESS liquid! No way would I have gotten a "slice" out as pictured above. If I could have rated 0 stars I would have but we'll say that the 1 star is for the fact that it smells divine while baking.

Classic Waffles

I made this "as is" and was not impressed. It was bland and heavy. I made it again adding a Tbsp of white vinegar to the milk, added a tsp of cinnamon and following others advice, increased sugar to 5 Tbsp and increased vanilla to 2 Tbsp. It definitely was not too sweet but I still was not impressed as it was very heavy. If I use it again I will probably separate the eggs, beat in the egg yolk, whip the whites in a separate bowl and fold them in to see if it lightens the texture. Honestly, I am hard to please with waffle recipes but I miss the down South "Waffle Ho*se" flavor and texture of their waffles and want to reproduce that!

Cornbread that is a Meal

This was very filling. I tweaked the recipe using other reviews for inspiration. I doubled the meat, used mild green chiles and cooked 1/2 of them with the meat. I seasoned the meat with lots of pepper, garlic salt and taco seasoning (1-1/2 packages). I also added 1/2 cup cheddar cheese to the mixture and seasoned the whole thing up with more pepper, salt and garlic powder. I cooked it for 25 minutes and then added the cup of cheese to the top and baked it for another 25 minutes. It still tasted a BIT bland and I normally don't salt my food but a dash of salt made it perfect. My husband hasn't tried it yet but if he likes it, I will make it again!
