Golden Pork Chops

My family loves these. I just let them sear in a pan for 25 minutes, instead of baking. Came out juicy both times! I made them with mashed potatoes and green beans and used the sauce as gravy. Yum.

Deer Meat

Balsamic Baked Tilapia

Sour Cream Cheese Casserole

Stuffed Guinea Squash (Eggplant)

Quite a treat! Made this last night and the hubby was very impressed (as was I). Cooked the skin longer as recommended by other reviewers, added some yellow pepper and squash to the mixture and put the cheese on top in the last 10 minutes. Next time will use half the butter though, 3-4 spoons would've been plenty for our taste.

Healthier Eggplant Parmesan II

This was my first time making eggplant parm. It turned out absolutely delicious! My family and co-workers loved it! 10 minutes of pre-baking on each side worked perfectly for me. I added some garlic, onions and mushrooms. Yum!

Slow Cooker Chicken Stroganoff

This has become one of our most favourite dishes. Easy to make and and utterly delicious! Even after modifying the recipy by using half the butter, adding mushrooms, using fat-free soup and cream cheese and wheat noodles. Who said healthy can't taste great!
