Cinnamon Belgian Waffles

These are the fluffiest, best tasting waffles ever! I use whole wheat pastry flour, which ends up having the same consistency as all purpose but is much healthier. I also use a tablespoon of honey instead of sugar. Also, I've had success using half milk half Greek yogurt/sour cream if I don't have any buttermilk on hand.

I love crepes, and this is such a perfect base recipe! If you're pressed for time, you can just use an electric mixer on a low to medium setting instead of letting the batter rest for a few hours. So good!

Caramels I

I replaced the corn syrup with honey and molasis and I did not bother with a candy thermometer, I just checked for the hard ball stage. It is a good recipe for playing with, and I plan to make lavender flavored caramels next time.

Chantal's New York Cheesecake

This is a great recipe. I modified it to make a cheese cake mouse by just beating the egg whites to stiff peaks and whipping the cheese and sugar mixture. You get two pies worth of filling instead of 1, and its wonderful!!

Special Lobster Bisque

Absolutely perfect. I make the chicken broth from scratch (chicken, lots of bay leaves, and some chives) and I add several cloves of garlic (because I add garlic to everything) Its best if you put the lobster in and then refrigerate overnight. I also used 3 cups milk and 2 cups half half and half because its essentially the same thing. SO GOOD!

Conch Fritters

This was absolutely perfect. I don't have conch where I live, but I wanted a conch recipe to adapt for periwinkles. It was perfectly complimentary to the periwinkle flavor!
