Caramel Snack Mix

I've made this recipe for a few years, but I don't bake it for an hour. My recipe calls for bake time of 15 min. and it turns out great and then you don't have to wait to dig in! :)

Slow Cooker Chicken with Mushroom Wine Sauce

Super easy to put this dish together-a big plus. I jazzed up the spices a bit, but it still wasn't a hit with my guys. Needed some peas to be added or another veggie for some color. Next time I'll pass on this one.

Honey Buttermilk Oatbread

The bread turned out O.K., rose to the top and had a nice texture. The flavor was missing something. I'll stick to my Oatmeal Bread which has molassis and more oats in it.

Roasted Pork Loin

A wonderful, flavorful dish. I roasted some potatoes with the loin and the entire house smelled fantastic. A have again according to my 3 sons and hubby. Thank you!

Tangy Sliced Pork Sandwiches

Fantastic! I used leftover pork loin with the sauce and the family loved it. The sauce had a great kick to it. Didn't have the cayenne so used red pepper flakes. One of my teenage sons even had some of the meat for a late night snack. Served it with broccoli soup. Perfect cold night supper.

Chantal's New York Cheesecake

Made this for guests yesterday and not one comment. Yes, it was creamy and rich but not much flavor I added lemon extract along with the vanilla. I followed the others posters' ideas with the hot water placed on the rack under the cake and that was perfect, no crack. I also thought the crust was a bit soggy even though I baked it for 5 min. Will try to jazz it up next time, maybe with chocolate or almond extract.

Chicken Seashell Salad

My family loved it. Left out the apples, added more pineapple tidbits, added a lg. can of mandarin oranges and glazed the nuts. Didn't use the almond extract added curry powder instead. Good the next day too.

Beef and Bean Chimichangas

Tried this last night with some adjustments. Didn't use the beans or the taco sauce, instead made the Red Enchilda Sauce and left out some of the called for spices then added 3/4 of that to the meat mixture and the reserved sauce was warmed up and served on top with sour cream. The guys loved it and declared it's a have again.

Way too sweet. Will cut back to 1 1/4 or 1 1/2c. sugar next time. Used lemon extract and a pinch of lemon peel. The boys ate them up in no time.

Mike's Taco Dip

Awesome dip. I drained some of the juice from the salsa and drained and seeded the tomato, which made it less soupy. It still was great the next day as well.

Cajun Chicken Pasta

Oh my, sooo good. A certain 'have again' according to my husband. Doubled the recipe, only used the red pepper, 2 T. cajun spice, 2 c. fat free half and half and used lingune noodles.

Bobbie's Oatmeal Cookies

Won't try this one again. The dough is way too crumbly to make nice shaped cookies. They fell apart when I scooped them onto the cookie sheet. I put in only 2 1/2 c. of oats and that is probably too much. Flavor was just O.K. I'll stick with my other oatmeal recipe.
