Pasta Pomodoro

Reviewed: Jun. 4, 2006
What a nice quick dish to make. Didn't use the broth, just used a can of diced tomatoes. Also added a cutup chicken breast. A must have again.

Chicken Wild Rice Soup I

Reviewed: Mar. 7, 2006
Excellent soup! I skipped the sherry, almonds and celery family preferences. I did mix the flour with some broth to make a roux then added it to the soup. I didn't want lumps. I simmered it for more than an hour and the guys came running to eat. Yum, will make again

Apple Butter Pork Loin

Very tasty, easy to throw together before church. A good meal to have in the fall. I served it with au gratin potatoes posted by Cathy on this site.

Creamy Au Gratin Potatoes

Reviewed: Feb. 19, 2006
Awesome recipe Cathy, thank you. It was easy and for a change I used colby/montery jack cheese. A favorite of my guys.

Just O.K. nothing special. Tried to jazz it up a bit, but not a favorite of this family.

Crispy Fish Fillets

Reviewed: May 13, 2005
The family loved them! They were easy and fast. Used cod and dijon mustard plus some Old Bay and pepper. Double dipped the fish, still lost some coating but that was my fault for frying too many fish at one time.

Restaurant-Style Coleslaw I

Reviewed: May 6, 2005
The flavor was O.K. but after sitting for a couple of hours, it turned too runny for my taste. Unfortunately, I took it to work for a potluck and not many tried it.

Emily's Famous Sloppy Joes

Reviewed: Apr. 29, 2005
Sorry, this is not what I expected. After test tasting it, I had to alter the flavor somehow. Added ketchup, mustard, worchestshire sauce and then more ketchup. Enough was enough. I'll go back to my tried and true from scratch BBQ mix.

Blueberry Buckle

Reviewed: Apr. 25, 2005
Oh my! So good and easy. This replaces other blueberry cake recipes hands down. So moist. Did use brown and white sugar for the topping and baked it for 45 min. Will take the rest to work tomorrow to see if the girls like it. Thanks, Janice

Asparagus, Chicken and Penne Pasta

Reviewed: Apr. 23, 2005
Very tasty and easy to make. I did alter it a little, I added cajun seasoning to the other spices. Will reduce the amount of pasta called for next time. Was great for leftovers the next day. I didn't need to add any chicken broth to it, was tasty just the way it was.

Chocolate Chocolate Chip Cookies I

Reviewed: Apr. 10, 2005
Our favorite from now on. Per other reviews I used 1/2 butter and 1/2 butter flavored Crisco, 1 c. white sugar and 1/2 c. brown, decreased the cocoa by 2 T. and baked 8 min. with 2 min. to cool on the sheet. They were gooey and soft. Did flatten out some, just what we wanted. We don't care for the more cake type that are mounded. These won't last long, thanks Kathy.

Pea Salad II

Reviewed: Apr. 10, 2005
Oh my, so good and easy! My husband loved this and proclaimed it to be his favorite pasta salad. I ran out of ranch dressing (I doubled the pasta) and mixed miracle whip, white vinegar and sugar as a dressing stretch. Used pickle relish as a sub for the cut up pickles and no celery. Will make again with celery and maybe red onion. Thanks Amanda

Bake Sale Lemon Bars

Reviewed: Mar. 18, 2005
Nice and lemony, not too sweet. I made a few changes per some other reviews. I halved the crust amounts, used the filling as written except used 1/2 c. lemon juice and put in a greased 9x9 glass dish. Might use this one again, am trying to find the perfect recipe for a graduation reception for the spring!

Bobbie's Oatmeal Cookies

Reviewed: Feb. 1, 2005
Won't try this one again. The dough is way too crumbly to make nice shaped cookies. They fell apart when I scooped them onto the cookie sheet. I put in only 2 1/2 c. of oats and that is probably too much. Flavor was just O.K. I'll stick with my other oatmeal recipe.

Nice and moist. I used brown sugar for the topping as others suggested. I used 1/4 c. of applesauce to replace 1/4 c. of the oil.

Cajun Chicken Pasta

Reviewed: Nov. 11, 2004
Oh my, sooo good. A certain 'have again' according to my husband. Doubled the recipe, only used the red pepper, 2 T. cajun spice, 2 c. fat free half and half and used lingune noodles.
