Layered Chicken and Black Bean Enchilada Casserole

This is one of my favorite meals to make and it's so easy! I use the left over chicken from when I make the RoastSticky Rotisserie Chicken from all recipes, so I can skip the chicken step completely. I use corn with the black bean mixture, and green enchilada sauce instead of red. It comes out so good and takes no time at all when the chicken is already made.

Jalapeno Chicken II

This was so good and easy! My husband said it was his favorite chicken that I've made. After reading some reviews about the jalapenos being too raw, I boiled mine for ten minutes before slicing them in half and seeding them. They came out great. I then stuffed them with cream cheese and some shredded cheddar. I put them back together and used one whole jalapeno per chicken breast. They weren't too spicy at all so I'm glad I used a whole one. Also - this is news to me - but be sure to wear gloves before you handle the jalapenos. I am a novice cook and did not know this - good thing I read some reviews. I didn't have gloves so I just put some ziploc bags on my hands. I had a hard time wrapping the bacon around lengthwise - so I used one around the width and secured with a toothpick. I cooked mine on the grill and the bacon crisped up perfectly - yum! I served with grilled corn on the cob and a salad. A great meal to go with a glass of wine - thanks!

Mexican Baked Fish

This was great! I followed the recipe exactly and used cod, but next time I think I'll use mahi mahi. I think I'll also squeeze fresh lime juice all over the fish before putting the salsa on. I baked for 10 minutes, and then put on the cheese and crushed chips, and baked for another 5 minutes or so. My fillets were thick and cooked perfectly. I served this with Baked Tostitos Scoop chips, sour cream, avacado, and black beans. My husband had the idea to put a little fish inside the scoop chip, top with a little sour cream, avacado, and black beans. It was soooo good that way and I'll serve it that way from now on. We are using the left overs in a fish burrito tomorrow. Thanks for the great and easy recipe!

Spicy Honey Mustard Pork Roast

I'm giving this 5 stars even though I messed up the recipe. I could tell it would be really good. I made my 1.5 pound pork roast in the slow cooker, and per the advice of another reviewer I cooked for two hours on high and seven hours on low. This was WAY too long and it came out very dry. Next time I will either make it in the oven or in the slow cooker but with a lot less time. I could tell this would have been delicious, I can't wait to try it again.

Lime Chicken Soft Tacos

I'm giving this four stars because I thought it was a little sweet for chicken tacos. I might try leaving out the sugar next time. It was still very good though. I threw all the ingredients in a crock pot with three small chicken breasts and it cooked in three hours on low. Very easy and overall pretty good. I'll try this again.

Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

These were so good! My husband loved them. I used the sun dried tomato vinaigrette dressing, so I followed others' suggestion and added some low fat mayonnaise to the tortilla before spreading on the spinach/chicken mixture. I was a little hesitant to do this at first but it really balanced the flavor out and I was glad I did. Yum! I will definitely make twice as much next time to have some left over for lunch.

Neat Sloppy Joes

Yum! These were really good sloppy joes. I made them for one pound of meat so I changed the recipe to 4 and followed it exactly, except I used a whole can of soup instead of the half can that it called for. I pretty much eye balled the other ingredients and it came out great! I don't think you can mess this one up. The celery is a strong flavor though, so keep that in mind when adding more than the recipe calls for.

Pesto Turkey Burgers

Roast Sticky Chicken-Rotisserie Style

This is by far the best chicken I've ever made. It was falling off the bone and so juicy and delicious. I followed the recipe exactly, except I only made one chicken and didn't account for it cooking faster. So my chicken cooked in about 3 and a half hours at 250. This was absolutely delicious and next time I will definitely make 2 and use the leftover chicken in another recipe.

Chicken Gravy

I used the pan drippings from a chicken I made and added it to the chicken stock. I used water with the cornstarch and 2 cups of chicken stock and it came out perfect. There was not a weird consistency at all. This was delicious!

Spinach Turkey Roll

This is so good. I never have whole wheat bread crumbs so I always use 2/3 cup of regular or Italian style bread crumbs and it works great. I also add about 1/4 c to 1/2 cup of parmesan cheese. The spaghetti sauce really makes the flavor great so make sure to pick one you really like. I leave out the onions bc we don't really like them that much and it is still good. I don't think you can mess this one up - thanks for the recipe!

Salmon Fillets with Creamy Dill

I used low fat yogurt instead of mayo, cut the mustard to 1/3 cup, fresh herbs, and added some salt , pepper, garlic and onion powder to the sauce. It was fabulous. The only suggestion is I don't see how the cook time can be 30-40 mins. My filets were thick and cooked perfectly in 20 mins at 375. Will def make this again!

Apple Stuffed Chicken Breast

I did not really care for this but I followed other reviews and added brown sugar and cinnamon with some other spices. There were too many different flavors going on. I wish I had not done that and stuck more to the original recipe. Also my husband suggested cream cheese with the apple mixture. If I make this again I might try that next time.

Alaskan Cod and Shrimp with Fresh Tomato

This was pretty good and very healthy. To add some flavor I suggest cooking in butter instead of olive oil. It also needed a lot of salt and extra spices in my opinion. I also added some parmesan cheese on top when the juices were evaporating. I would also suggest serving this with pasta. Over all a very good dish, but needs a few minor adjustments to make it even better.
