Chicken Pot Pie I

I like to make this recipe when I'm in a rush; it's so easy! We normally have chicken breasts on hand already cooked, which makes it even easier. ~Later: I'm going to try to make this a little healthier by substituting a homemade sauce (1 cup chicken broth, 1/2 cup skim milk, 1 Tbsp. flour, salt, and pepper) for the chicken soup.

Easy Mexican Casserole

It looked great. It would have tasted great, but I never had any. (We gave it to a friend.) I actually used mozzarella cheese. Can't wait to try it again--and keep it!

Blueberry Sauce

I forgot to put in the cinnamon and I chose not to put in the almond extract. :D It was still delicious! I had it over fat free vanilla frozen yogurt. Next time I'm going to try pancakes...yum!

Spiced Pear & Apple Oat Bread

Great recipe! The flavors complement each other so well. The only change I made was to use white whole wheat flour instead of the all purpose and whole wheat. Thanks so much for a great recipe!

Basic Corn Muffins

Delicious! Try it with buttermilk; I think it tastes better. For those of you who don't like sweet cornbread, you should try using about a tsp. of honey instead. I used 3/4 cup all-purpose flour and 1 1/4 cups cornmeal to make it healthier.

Cucumber-Mango Salsa

Delicious salsa. I leave the onion out, and it doesn't need it. Make sure you put the mango in (I didn't one time because I didn't have any) because it really makes the flavors zing. :)

Home-Style Vegetable Beef Soup

I doubled it for my food-consuming family. Instead of using all V-8 juice, I used a can of V-8 as well as a can of tomato. I didn't put the water in. Delicious!

Apple-Berry Pie

I made this pie once; I made a variation of the pie once. The pie is a very good recipe, but (in my opinion) it needs about a quarter of the sugar. My variation: I used 2 Tbsp. sugar (we like our pies slightly sweet) and no flour or butter. The rest of the ingredients I did not change except for adding a little more apple and blackberries. Baked at 425 F on the bottom rack of the oven for exactly 23 minutes. The result was a golden, scrumptious pie. Thank you so much for this wonderful recipe!

Easy Iced Coffee

Absolutely fantastic. I make it a little differently by adding about a teaspoon cocoa powder and 1/4 tsp. vanilla extract and blending the whole thing together. Yum!

Donut Muffins

Whole Wheat Muffins

Wonderful recipe! It's really easily adapted. I've tried banana blueberry muffins by substituting the milk for bananas (I added a little milk to soften the mixture) and adding blueberries! I'm going to try lemon poppy seed muffins sometime--yum!

Gingerbread Boys

Amazing cookies! You will probably need a lot of flour for your counter top. When I only "lightly" floured my counter, the dough stuck something awful. I had to scrape it off with a spatula and re-knead it. It worked well with lots of flour which I brushed off the cookies before I put them on the tray. These would be good with more ginger, especially if you like your cookies spicy. I subbed applesauce for half the butter and everything worked fine! As other reviewers suggested, I used molasses instead of the corn syrup, which I believe is essential to a good gingerbread cookie. Thanks for a great recipe!

Peachy Tossed Salad

One of the very best salads I have ever had. I left the feta cheese out because it is high in saturated fat, and I used those yummy Dole sliced peaches in the plastic container with the blue lid (24.5 oz) b/c peaches aren't in season this time of year (tip: rinse before using--it gets all the syrup off). The only other change I made was to use store-bought poppy seed dressing :) because I had it on hand. Delicious! It goes in my recipe scrapbook! :)

Herb Crusted Pork Tenderloin

I admit it, I cheated. I used those nice pre-sliced pork tenderloin pieces and baked it for about 17-20 minutes. Wow! The only other change I made was to use oil instead of butter. It was so good. Thanks, CC, for a wonderful recipe!

Corn Relish Salad

I would give it 4 1/2 stars if I could. I used less red onion, and I minced it, I didn't have any fresh basil so I used 1 tsp. dried, (not quite as good I'm sure) and I used fat free Italian Caesar Dressing b/c I couldn't find the reduced fat plain old Italian dressing. Yum!

Ninety Minute Cinnamon Rolls

The best ever! These were so good. To make less fat in the whole thing but just as moist, just whip 1/2 stick of softened butter and 1/4 cup water (make sure you add the water in gradually while whipping). Use half the butter mixture in the dough and half with the cinnamon sugar. It worked beautifully, and it cut the amount of fat (from the margarine/butter) from 7.6 grams to 3.8 grams. The only other thing I did differently was to put the rolls in a 9x13 inch baking pan. I decreased the oven temperature to 350 (25 degrees less) and cooked them for 20 min. The centers were cooked and the tops were not charred. :) Delicious.

Hearty Turkey Stew with Vegetables

This is my all-time favorite soup!! For a heartier flavor, I subbed whole wheat flour for the all-purpose flour. I left the green bell out the first time I made it, simply because I didn't have it on hand. I think it is much better without!

Mother-In-Law Eggs

These deviled eggs were delicious. I would give them a 4 1/2 stars if possible. Instead of the hot mustard, I used honey mustard. It worked perfectly. I also left the pimento-stuffed green olives off because I didn't have them. I added Worcestershire sauce to the mix as well. Delicious!

Zesty Slow Cooker Chicken Barbecue

The BEST!!! And it's a whole lot lower fat than most pork barbecues. It was a tad on the sweet side. Next time I'll just leave the sugar out entirely. As other reviewers have noted, it is essential to the recipe to use a high quality barbecue sauce (or even make your own, if you want).

Springtime Spinach Salad

Okay, I made tons of changes, but it was still WONDERFUL!! I took out the bacon, kiwi, and mandarin orange simply because I didn't have them on hand. Second, I took out the onion and eggs because I don't care for them. I didn't make as many changes to the dressing--all I did was use regular mustard instead of spicy brown mustard. Oh, I didn't have any croutons on hand, either. So, my salad turned out much simpler than it was supposed to be, but it was still GREAT!! Thank you so much!
