Spiced Pear & Apple Oat Bread

Great recipe! The flavors complement each other so well. The only change I made was to use white whole wheat flour instead of the all purpose and whole wheat. Thanks so much for a great recipe!

Good, solid recipe. IMHO, it only needs about half the oil and double (or even triple) the orange zest. (It really depends on your tastes; I like my salads zing-y.)

Easy Iced Coffee

Absolutely fantastic. I make it a little differently by adding about a teaspoon cocoa powder and 1/4 tsp. vanilla extract and blending the whole thing together. Yum!

Whole Wheat Sweet Potato Muffins

These were delicious. I would give them five stars, except I thought that a cup of honey is overkill (I cut it down to 1/2 cup), the timing was off (I had to bake for about 30 minutes), and they would have been WAY to liquidy if I had put in the yogurt. With those changes, these are perfect.

Sun-dried Tomatoes I

So good! Most sun-dried tomatoes are soaked in oil, but I was looking for a more low-fat recipe. I diced them, brushed them with olive oil, and sprinkled with Italian seasoning and black pepper. Yummy. Here's one thing that you can do with them: take your favorite bread/roll dough, roll out in a rectangle like you would with cinnamon rolls, then brush with a little olive oil or melted butter. Sprinkle 3/4 cup of these on and maybe some grated Parmesan, and roll up, jellyroll style. Cut with dental floss. Place in a baking pan, sprinkle with Parmesan, and cook at 350 for 20 minutes.

Blueberry Cream Muffins

Five stars even with using 1 1/2 cups fat free sour cream and 1/2 cup oil, and 1 1/3 cups sugar, and white whole wheat flour. These are my favorite blueberry muffins. :)

Zesty Slow Cooker Chicken Barbecue

The BEST!!! And it's a whole lot lower fat than most pork barbecues. It was a tad on the sweet side. Next time I'll just leave the sugar out entirely. As other reviewers have noted, it is essential to the recipe to use a high quality barbecue sauce (or even make your own, if you want).

Mama's Asian Chicken and Rice

This is the best Asian chicken dish I have ever had. My family agrees. The only change I made was to leave out the five-spice powder, as we don't care for it. I didn't double the sauce like other reviewers suggested, but I was generous with all of the sauce ingredients. Otherwise, make no changes to the recipe--it's perfect! I will make this often! Thank you!

The perfect pancake, with nothing changed. Okay, one *little* change. I used white whole wheat flour. :) If you use all-purpose flour on a regular basis (I don't), then don't change anything. :)

Gingerbread Boys

Amazing cookies! You will probably need a lot of flour for your counter top. When I only "lightly" floured my counter, the dough stuck something awful. I had to scrape it off with a spatula and re-knead it. It worked well with lots of flour which I brushed off the cookies before I put them on the tray. These would be good with more ginger, especially if you like your cookies spicy. I subbed applesauce for half the butter and everything worked fine! As other reviewers suggested, I used molasses instead of the corn syrup, which I believe is essential to a good gingerbread cookie. Thanks for a great recipe!

Herb Crusted Pork Tenderloin

I admit it, I cheated. I used those nice pre-sliced pork tenderloin pieces and baked it for about 17-20 minutes. Wow! The only other change I made was to use oil instead of butter. It was so good. Thanks, CC, for a wonderful recipe!

Sunshine Morning Muesli

3.5 stars, without changes. Five stars for health, without changes. :) I added the orange juice like the recipe submitter suggested, but it didn't take away the tang of the yogurt, so I added about 2 tsp. honey and it is perfect. As another reviewer suggested, vanilla yogurt would work well, but to keep the sugar content down a little, I would use half vanilla yogurt and half plain yogurt. This recipe works really well with any fruit, dried or fresh. I put peaches in it and left out the walnuts due to an allergy. Thank you for a quick and healthy breakfast! (one more *little* :) change I made: fat free yogurt. I couldn't tell a difference, it was so creamy.)

Hearty Turkey Stew with Vegetables

This is my all-time favorite soup!! For a heartier flavor, I subbed whole wheat flour for the all-purpose flour. I left the green bell out the first time I made it, simply because I didn't have it on hand. I think it is much better without!

Delicious muffins. I took the advice of other reviewers and left out the white sugar. They would have been too sweet with it. I used cranberries instead of the raisins and pecans. They complemented the pumpkin very well.

These were very good. I wasn't sure if the recipe meant granulated white sugar or confectioner's sugar, so I used 2/3 cup of each. It worked perfectly. Here's a few tips: 1) use any citrus zest you have on hand--I used a 1/4 tsp. lime juice and a 1/2 tsp. orange zest. 2) If you don't have cream of tarter, use 1/2 tsp. white vinegar. 3) Don't even think about not using parchment paper. At least grease the cookie sheet. :) If you don't, the meringues will stick something awful to it. I learned from experience. :D

Curried Honey Mustard Chicken

Yummy recipe. I'm sure it is delicious with that much butter, but I just used a tablespoon and it came out just fine. The cooking time is way off, too. I ended up cooking it for about 45 minutes.
