These turned out great and were really easy to make! The only substitution I made was using agave nectar instead of honey.

Apple Oatmeal Crisp

Reviewed: Feb. 13, 2012
Awesome & super easy! I didn't have an issue with it being dry like others did. The only thing I did different was not use nearly as much white sugar as the recipe called for.

Bird Seed Energy Bars

Reviewed: Jun. 19, 2011
These have a great consistency! Many of the recipes I've tried come out crumbly or mushy, but this recipe came out perfect! I plan to add raisins next time.

Awesome! I used rice milk, but otherwise followed the recipe. This is a VERY cheesy dish! All of the flavors went great together. It's very easy to make.

Vegetarian Moussaka

Reviewed: Jan. 9, 2011
Loved it! I used red potatoes, dry lentils, and rice milk. I had some trouble with the eggplant, zucchini, and potatoes sticking to the pan, but everything still turned out great!

Sherry Chicken Curry

Reviewed: Nov. 24, 2009
This was awesome! The only thing I did different was use chicken bouillon instead of beef (we do not eat red meat). It was a bit messy to make, but I had no problems overall.

Summer Vegetarian Chili

Reviewed: Nov. 17, 2009
Excellent chili! I've made this twice, both times with wine. I altered the ingredients slightly (didn't use pepper because I don't like it), but in general followed the recipe.

Connie's Zucchini "Crab" Cakes

Reviewed: Aug. 27, 2009
These were awesome! I did sweat the zucchini. I did not use any oil because I baked them instead of frying them. I also did not use any flour - I just put them on a cookie sheet after shaping them into patties (400 deg, 12 min on each side). I made a mixture of mayo, sour cream, and hot sauce to dip them in.

Savory Cheddar Zucchini Muffins

Reviewed: Aug. 27, 2009
I'm rating this 5 stars after the following: I used shredded pepper jack cheese (no parmesan or cheddar) and added a 8.75 oz can of corn, drained. I did not use any bacon. Also, I did not drain the zucchini. The texture of the muffins was great!

This turned out excellent! I made a few alterations/changes. I substituted Splenda for sugar, and added 1/2 tsp cinnamon and 1/2 tsp vanilla. I used a 29 oz can of peaches, drained. With these changes it turned out perfect!
