Grandpa's Guacamole

Reviewed: Jan. 9, 2010
This is a great recipe for "quick" avocado dip. This would be okay for a "what do I prepare?" for the office party. There are one or two drawbacks; one it is a bit salty for our tastes so backing off the Ranch dressing is in order; and two it could use a couple ounces of a good Salsa or Pico de Gallo. I'll try it again that way.

Excellent and easy recipe. Probably will make the recipe with half/half next time. Seasonings as specified are spot on. Thanks.

Gingered Carrots

This helps make a meal a bit more elegant. We like the recipe and it is dirt-simple to do. That's the best part. May try it with fresh ginger sometime.

Very flavorful. Great blend of spices. I added a bag of frozen okra; served with Filé; super! Easy to fix.

Earns the "Best" name easily. Great texture and the chopped onion makes the recipe sing. (or cry)

Debdoozie's Blue Ribbon Chili

This worked out well. I like the ability to control the heat based on the type of salsa used. Very tasty, good chili base flavor. Will make again.

Penne with Shrimp

Excellent recipe and very easy to prepare. I'll do this one again. Also, works well without the wine as the wine opener was broke, and I now have a new one.

Very good recipe. I liked the idea of it being four servings using 1 pound of meat. I'll make this one again.

Fresh From the Vine Tortellini

Reviewed: Jul. 26, 2013
I really liked this dish. It has a very sophisticated taste. The only change I made was the pasta as I used rotinis - I think that's what they're called - tubes as my grandson would say. This is a dish you'd pay $$$$ dollars for at the best of Italian restaurants. Would also be good with Portobello mushrooms or even shrimp added. I served the dish with crusty garlic Italian bread. Good stuff and easy to make.

Cheesy Ham and Hash Brown Casserole

Reviewed: Jul. 13, 2013
This is a great tasting, super quick recipe that can be made in a few minutes. Great for a Sunday School or pot luck event. It received excellent reviews. Will make again and do note that for a family there is a ton of servings if treated as a side dish instead of a main dish. Only modification I want to try is cream cheese instead of sour cream. Price alert! The ingredients for this cost me $18. Here's why; used only premium brands and of course, no generics or store brands. The ham was around $8 for an 8-9 ounce ham steak. Parmesan cheese, not the stuff in the green plastic jar, was a bit pricey.

Easy and Delicious Chicken and Rice Casserole

Reviewed: Jun. 29, 2012
Perhaps the simplest chicken and rice casserole on the planet. The flavors popped just right and the chicken was moist. Only caveat I would have is to spray cooking spray on the bottom of the casserole dish to help with clean up.

Jenny's Jambalaya

Excellent recipe. Easy to fix. Tastes genuine. I added okra to make it a bit different. Recall that the okra will thicken to sauce too. Try it.

World's Best Potato Salad

Reviewed: May 2, 2010
Yes! This is definitely the best potato salad of this genre. Creamy smooth texture. The recipe goes together quickly and it is easy to fix. The vinegar gives the right bite to the taste along with the celery for some crunch. Took this to our church carry-in and received a lot of compliments. This will be our top-drawer potato salad. Thanks.

Cousin David's Slow Cooker Brisket

Reviewed: Jan. 1, 2010
I don't know what I might have been expecting of this recipe. I did use a brisket - not corned beef of course but it turned out more like pot roast and was completely disassembled and did not slice like traditional brisket. It's worth another try though and watch the cooking time. Taste is good though.

Cashew Crusted Chicken

Reviewed: May 16, 2009
This recipe was a great change from the usual. The apricot, dijon, and curry dressing gave the recipe an elegant presentation along with the crushed cashews. I did back off on the dijon using half of what was called for to reduce the bite of the dejon. This will be a 'do-it-again' recipe for us.

Easy Broccoli Quiche

Reviewed: Oct. 5, 2013
It was okay but not well executed for the time factor. There probably needs to be a warning on this recipe to NOT USE FROZEN broccoli. I did and the pie came out a bit wet. Flavor was excellent however.Only change I made was adding cooked chicken and a splash of hot sauce for a bit of a kick. With all of that said; will try this again using FRESH broccoli. No doubt it will need to bake 45 min too. The trick of putting the cheese on the bottom will be tried too. Don't give up on this recipe however.
