Easy Broccoli Quiche

It was okay but not well executed for the time factor. There probably needs to be a warning on this recipe to NOT USE FROZEN broccoli. I did and the pie came out a bit wet. Flavor was excellent however.Only change I made was adding cooked chicken and a splash of hot sauce for a bit of a kick. With all of that said; will try this again using FRESH broccoli. No doubt it will need to bake 45 min too. The trick of putting the cheese on the bottom will be tried too. Don't give up on this recipe however.

Apple Cinnamon White Cake

This is a wonderfully easy cake to make. After making this there is no longer any excuses to buy boxed cakes. The cake took a full 60 minutes to bake; checking it every 5 minutes after 40 for doneness. Next time I might double the apples, back off on the brown sugar just a tad and add walnuts. Nice fall themed cake! We'll do this one again. Taste: I really liked the texture and bite, preferring a bit of a heavier cake for this style. Excellent taste and went exceptionally well with a scoop of Blue Bell.

Fresh From the Vine Tortellini

I really liked this dish. It has a very sophisticated taste. The only change I made was the pasta as I used rotinis - I think that's what they're called - tubes as my grandson would say. This is a dish you'd pay $$$$ dollars for at the best of Italian restaurants. Would also be good with Portobello mushrooms or even shrimp added. I served the dish with crusty garlic Italian bread. Good stuff and easy to make.

Cheesy Ham and Hash Brown Casserole

This is a great tasting, super quick recipe that can be made in a few minutes. Great for a Sunday School or pot luck event. It received excellent reviews. Will make again and do note that for a family there is a ton of servings if treated as a side dish instead of a main dish. Only modification I want to try is cream cheese instead of sour cream. Price alert! The ingredients for this cost me $18. Here's why; used only premium brands and of course, no generics or store brands. The ham was around $8 for an 8-9 ounce ham steak. Parmesan cheese, not the stuff in the green plastic jar, was a bit pricey.

Homemade Sloppy Joes

These are so good. I followed the recipe to a T. Don't hurry this one. Prep is easy but have patience on the simmering,.. simmering... simmering. Joe's were not overly sweet like the canned stuff. I think it is very, very important to use very lean meat. I used 93/7 hamburger. No crease on the bottom of the bun - very important for taste and presentation. Served with Tater Tots and Cole Slaw.

Quick and Easy Mexican Chicken

This was quick and easy and very tasty. Makes an elegant meal. Only recommendation I would have would be to use a quality salsa if using commercial. Better yet, I'll make my own salsa or pico de gallo next time. Picky brother-in-law liked it so it was good. Will make again.

Gnocchi I

I agree with "What's for dinner, mom?" in her review. There needs to be more help with the dough in what the end product should be texture wise and so on. My dough came out a bit dry. It rolled into ropes with some effort. Granted, this is the first time I've tried this type of a recipe. Followed it to the "T". I don't have a real good handle on what good gnocchi should taste like. Served with a jar of spaghetti sauce that was on-hand and grated mozzarella. I will definitely attempt this recipe again; adding some spices to make it savory.

Absolutely Ultimate Potato Soup

This is a very good recipe and could be a great starter for some experimentation. I believe the potatoes are really important. I used Russets and I was not pleased with the texture of the potatoes when served. I will try with a different potato next time. Perhaps a Yukon Gold.

Too Much Chocolate Cake

This one is definitely a "bake and take" for the Church or Office lunch. Really easy to put together. Turns out the oven here is a bit fast so the cake came out a touch drier than I would have preferred; used the correct baking time. I'll ratchet back the oven time a little bit and see if that improves things. By the way, using the mini-chocolate pieces makes great sense. Didn't have any problems with the amount of oil and the cake fell out of the bundt pan after it was cooled completely. Enjoy.

Spicy Garlic Lime Chicken

Followed the recipe to a T. I was highly excellent. Even my picky chicken lovin' brother-in-law liked it and gave it a thumbs-up. Thought the recipe might be a bit caliente with the cayenne but it was spot on with just enough heat. The garlic and lime makes the whole recipe pop. Definitely recommended and would be good grilled as well.

Tomato Pork Loin Chops

I made this recipe almost exactly as offered omitting the chili powder as I just didn't have it in the pantry. I did add a couple of light shakes of cayenne powder for a small hit of heat. The fennel seed imparts a sophisticated taste to the dish. I did use a can of seasoned (basil/garlic) tomatoes instead of the water. The dish was served over a bed of rice with peas on the side. This is an excellent dish that was easy to make and has a great presentation. I did add one cubed yellow squash for texture and color. Will definitely make this one again.

Easy and Delicious Chicken and Rice Casserole

Perhaps the simplest chicken and rice casserole on the planet. The flavors popped just right and the chicken was moist. Only caveat I would have is to spray cooking spray on the bottom of the casserole dish to help with clean up.

World's Best Potato Salad

Yes! This is definitely the best potato salad of this genre. Creamy smooth texture. The recipe goes together quickly and it is easy to fix. The vinegar gives the right bite to the taste along with the celery for some crunch. Took this to our church carry-in and received a lot of compliments. This will be our top-drawer potato salad. Thanks.
