Easy Broccoli Quiche
It was okay but not well executed for the time factor. There probably needs to be a warning on this recipe to NOT USE FROZEN broccoli. I did and the pie came out a bit wet. Flavor was excellent however.Only change I made was adding cooked chicken and a splash of hot sauce for a bit of a kick. With all of that said; will try this again using FRESH broccoli. No doubt it will need to bake 45 min too. The trick of putting the cheese on the bottom will be tried too. Don't give up on this recipe however.

Apple Cinnamon White Cake
This is a wonderfully easy cake to make. After making this there is no longer any excuses to buy boxed cakes. The cake took a full 60 minutes to bake; checking it every 5 minutes after 40 for doneness. Next time I might double the apples, back off on the brown sugar just a tad and add walnuts. Nice fall themed cake! We'll do this one again. Taste: I really liked the texture and bite, preferring a bit of a heavier cake for this style. Excellent taste and went exceptionally well with a scoop of Blue Bell.

Fresh From the Vine Tortellini
I really liked this dish. It has a very sophisticated taste. The only change I made was the pasta as I used rotinis - I think that's what they're called - tubes as my grandson would say. This is a dish you'd pay $$$$ dollars for at the best of Italian restaurants. Would also be good with Portobello mushrooms or even shrimp added. I served the dish with crusty garlic Italian bread. Good stuff and easy to make.
