Apple Flavored Pot Roast

Reviewed: Apr. 18, 2015
Delicious. I cooked it in the crock pot by coating it in the onion soup mix and searing it in a pan. I put it in the crock pot and added the veggies (carrots and parsnips)underneath. The sweet and savory combo worked nicely.

Cranberry Sauce Extraordinaire

Reviewed: Nov. 21, 2012
Delicious. I get compliments every time I make it. It tastes like a savory pie filling that compliments poultry perfectly. The nuts and dried fruit make it!

Full of fluid if you bake immediately. Absolutely perfect if you bake from frozen.

Eggplant Parmesan II

Reviewed: Feb. 24, 2010
Yum. I left the skin on the eggplant, which of course was "chewy" but much quicker to prepare and did nothing but add more fiber to the recipe. I breaded lightly as I am on the South Beach diet. Ditto to all below...cooking 10 mins per side is a must. Grease cookie sheet. Use plenty of sauce.

Seafood Au Gratin

Reviewed: Feb. 15, 2010
I was forced to substitute several ingredients because I didn't plan ahead. I substituted minced clams for crabmeat, 1/4 cup marsala cooking wine for white wine and cheddar + american cheese instead of parm and provolone. It all worked out fine with these substitutions...although the crabmeat would have created a better texture without a doubt.

Simple Whole Wheat Bread

Reviewed: May 10, 2009
I'm a novice bread maker so I didn't realize that while it IS easy, bread making DOES take time. If making this in a Kitchen Aid mixer, you may want to reduce by 1/3 to make 2 loaves...when the inital dough rose, it was so high it oozed into the mixing tool attachment connection. Also, I found it helpful to cover with a WET towel...the dough didn't stick to the towel. Just some ideas from someone new to bread making.
