I had an extra can of cherry pie filling lying around and I was looking for something to make with it. This recipe was perfect - I already had everything I needed in my pantry.
I was a little skeptical about the orange zest and cider vinegar, but the orange added a great extra zing to it and I can't say that I noticed the cider vinegar or ever thought about it after taking my first bite because it. was. delicious. Perfect with a scoop of icecream.
I halved the recipe because I only had one can of pie filling in the house, and I baked it in an 8x8 pan for the same amount of time. It might have fit into a 9x9, but I wasn't sure I could stretch the pie dough to fit the entire bottom (I didn't roll out the dough, I just pressed it in with my hands). The 8x8 led to a thicker bar that you might need a spoon to eat, a 9x9 - if you could stretch the dough - would probably be easier to eat as a finger food. But I thought mine was just great.
I also made about 1 and 1/2 the amount crumble topping because I love a thick crumble. I put the oven on broil for a minute or two to make sure that it was nice and crunchy.
I will be making back to this recipe again and again, its too simple to resist. You can make this with practically any pie filling, I'll be trying it with peach sometime (probably too) soon.
