Pan-Poached Alaskan Salmon Piccata

Reviewed: Aug. 23, 2005
Absolutely delicious! I don't eat capers but leaving them out left nothing to be desired in this recipe. Melts in your mouth!

Hot Peanut Sauce

Reviewed: Sep. 8, 2005
Brought this sauce with my threaded chicken strips to a Bronco game and every piece was gobbled up and people even poured the extra sauce on their burger after we ate all the chicken! Delish!

Cauliflower and Broccoli Bake

Reviewed: Dec. 14, 2005
This is great. I would add more vegetables because it seems like a lot of sauce for not a lot of veggies. But it tastes wonderful!

This couldn't be easier. Mix the dry onion soup into the other two before your pour. Delicious!

Orange Glazed Carrots

Amazing. The orange juice complements the carrots so well! Use baby carrots or carrot chips. Delicious!

Turkey Empanadas Grande

Reviewed: Feb. 8, 2006
This recipe tastes great if you can get it to the table in one piece. The filling is hot which practically melts the pie crust. Maybe a biscuit mix would be better. Anyway, after getting frustrated with the annihilated crust, it baked just great and was very tasty. Makes 2 crust's worth, but hubby and I split one and saved one for the next night. I don't think I could spread it out for 8 svgs and be satisfied.

Spinach Brownies

This is terrific. Much like a crust-less quiche. I had to cook mine a bit longer to get the middle done. Yum!

Spinach Cheese Manicotti

Reviewed: Mar. 29, 2007
This is really great! Made exactly as written except I used fresh spinach and real garlic and it was wonderful! I would suggest spicing it a little more, maybe a little salt. Would be easier with the fresh spinach to use the big pasta shells than manicotti. Next time!

Artichoke Wonton Cups

Reviewed: Apr. 9, 2007
This recipe is wonderful! My only change is to take the amount of mayo and halve it, substituting plain yogurt for the other half. A little healthier and nobody can taste the difference. My wonton wrappers took a little longer to brown than directions stated. The cups are gooey and delicious! Thanks!

Chicken Piccata II

Reviewed: Apr. 17, 2007
This makes a delicious chicken breast! I used chicken broth instead of the boullion/boiling water combo and it turned out great! I also used a lot of lemon juice but only a hint of it came through. Definitely not too overpowering. Excellent!

Artichoke Salad I

Reviewed: Apr. 24, 2007
This turned out great. I usually substitute plain yogurt for mayo and did so again in this recipe. I ended up making a double batch and had a lot left over so I threw in some cut up cooked chicken and heated in the microwave for lunch the next day. Great!

Crabby Cream Cheese Wontons

Reviewed: Aug. 6, 2007
I didn't care too much for these, they didn't taste like the ones from the restaurant we love... I don't know if it was the Worcestershire or the soy sauce or what but we probably won't make them again.

This was just okay. I thought it was too tart. My husband loved it though.

Bodacious Broccoli Salad

This was really quite good, kind of sweet, definitely tangy. All the meat and cheese went over great with those non-vegetable lovers.

Chinese Cold Pasta Salad

Reviewed: Sep. 7, 2007
We love this recipe. I'm going to break the rules and rate it 5 stars even though I didn't make it exactly as written. I didn't put any red bell pepper slices, green onions or cilantro (am I the only one who doesn't like cilantro?) in it, but I added cooked chicken. My husband requests this one often!

Chicken and Broccoli Braid

Reviewed: Sep. 7, 2007
We love this recipe in our house. I have made it with the crescent roll as suggested and also with the canned pizza dough and both are absolutely delicious. Great way to use up leftover chicken and really easy to put together. Excellent!

This is an excellent, easy recipe. We used cannellini beans and skipped the boullion cubes and it turned out perfect.
