Easy Rum Cake

Super easy cake to make. I used light rum and it turned out so moist and delicious. I also used butter instead of oil in the batter and it was divine. I took it to a camping party and it was devoured in no time!

Overnight Chinese Daikon Radish Pickles

First, the smell is overpowering as it marinates. You want to believe it will taste better than it smells, but it just doesn't. I would rather shred my daikon and make the pan fried daikon cakes from this site than endure the smell and bad taste of these "pickles".

Mom's Zucchini Bread

Delicious! We substituted pureed carrots for 1/2 c. of oil and it turned out delectably moist and had even more veggies! Yum, will definitely make again!

Baked Zucchini Chips

Excellent recipe, super easy to make and turns out great. I had to add garlic powder and some Greek seasoning to the breadcrumbs to expand the taste. I used real shredded parmesan too. YUM!

Basic Brine for Smoking Meat

We doubled the recipe to brine 4 chicken leg quarters overnight. We threw the legs in a pan and put the pan in the smoker the next day. A few hours later, we ate the most delectable, fall off the bone tender chicken ever made! Delicious! Can't wait to try it with a turkey this Thanksgiving!

Chinese Napa Cabbage Salad

If I followed the recipe exactly, I could feel comfortable giving it 5 stars. But, I didn't, so I won't. I used plain cabbage, no almonds, no green onions, and added shredded carrots. The salad was a hit, we took to a potluck outdoor wedding and didn't bring home any leftovers. My husband has asked me to make the dressing for this on all our salads!

Slow Cooker Pineapple Pork Roast

I thought this was good but not great. I had to add a bit of water halfway through because it looked like it was getting overcooked (which equals dry in the slow cooker). I served it over couscous (which I made with orange juice to blend flavors with the pork) and a side of broccoli. It went well together, but next time I think I'll tweak the recipe.

Saucy Chicken and Asparagus

This recipe was pretty good. My asparagus turned out really soggy, though. Maybe I'll just leave it out next time, steam it separately. I like more crisp asparagus. The sauce was excellent over the chicken and rice I served it with.

Slow Cooker Chicken Cacciatore

I made this several nights ago and it was delicious. I used frozen chicken breasts, a can of diced tomatoes (with juices), some spaghetti sauce and a little wine. No veggies this time. Then served it over spaghetti noodles and both husband and I loved it! Pair with a salad and roll and it is great!

Turkey Noodle Soup

Used what I had on hand which was carrots and turkey so it didn't look as pretty and green as the picture but it was good. I used some leftover gravy from Thanksgiving too, instead of the mix. Pretty good!

Bierrocks II

This was great, easy and delicious. You are basically making your own "Hot Pocket". I used pizza dough in a can and it worked wonderfully. Spiced it a little more, used a bit of garlic, cayenne, cumin and chili powder. YUM!

Chicken and Broccoli Braid

We love this recipe in our house. I have made it with the crescent roll as suggested and also with the canned pizza dough and both are absolutely delicious. Great way to use up leftover chicken and really easy to put together. Excellent!
