Banana Oat Muffins

Great muffins, even more healthy if you substitute applesauce for the oil. I always add cinnamon and sometimes walnuts too. Great breakfast and snack.

Baked Oatmeal II

Excellent healthy breakfast or snack, with substitutions. Use applesauce in place of the butter, and only 1/3 - 1/2 cup of brown sugar. 1 cup is way too much. I added extra cinnamon and have used vanilla soy or almond milk instead of milk and vanilla extract. 40 minutes of baking time is too long if you don't want it to be too dry. I prefer to bake it in an 8x8 pan for 25-30 minutes, very moist and hearty. If you love oatmeal you'll like this too!

Lentil Soup

Great recipe! Add ground sausage or beef and this makes a wonderful chili too. Defintely needs some cumin, even if you aren't going to add meat. I also used part chicken broth and part water instead of all water. I double the veggies and used 28oz of crushed tomatoes. This is a recipe that can be loosely followed, so be creative and make it to your liking.

Twice Baked Sweet Potatoes with Ricotta Cheese

So Delicious! This doesn't require a food processor or even the oven. I microwaved the potatoes until done. Mashed them by hand and mixed all ingredients together. They can either be put back in the microwave to heat through or in the oven. I've done it both ways depending on if I was using the oven for something else. Very delicious and easy recipe. Definitely a keeper!

Shrimp and Quinoa

Delicious quinoa recipe! Don't be turned off by the raisins, they make an excellent addition and I may even add more next time. I made the following changes....double the mushrooms and asparagus and didn't add olive oil to the quinoa. Will definitely make again, and this recipe can easily be altered with different vegetables.

Zesty Tilapia with Mushrooms

Delicious way to make tilapia. I have made this several times, using different types of mushrooms (baby bellas, white, crimini). I usually serve with rice and asparagus. A very healthy and satisfying meal.

Baked Spaghetti Squash Lasagna Style

Don't be turned off by the cook time shown. You can microwave the halved squash for 8 minutes instead of baking. And although I followed the recipe for the stewed tomato sauce, you could even use jar spaghetti sauce. This was absolutely delicious! My boyfriend said it was one of his favorites. Also made excellent leftovers for lunch the next day. Will definitely make again!

Mexican Baked Fish

Delicious and so easy to make! I used tilapia instead of cod, and will probably make with chicken too. There is no need to measure the ingredients, which makes it that much quicker. Minimal clean up, just one pan to wash! Will definitely make this many times again!

Grilled Tilapia with Mango Salsa

AMAZING! I would recommend using mango and strawberries. I doubled the salsa recipe and used 1 mango and 1 cup of diced strawberries. The mango and strawberry combination was perfect. Instead of grilling, I cooked the fish in a frying pan with the marinade. Served over rice, this meal looks and tastes like something from a restaurant!
