Turkey Enchiladas
I thought this was a good recipe - I used it as inspiration. I started with ground turkey, and browned it with 1/2 c of onion, 1 tsp cumin, 1/2 tsp each paprika and chili powder and 1/4 tsp black pepper and some salt. Once it was browned I added some green enchilada sauce (canned) and then rolled the mixture in 10 white corn tortillas, topping with more enchilada sauce and a little bit of cheese. Baked 20 minutes at 350 and they were yummy.

Pumpkin Pancakes
I have made pumpkin pancakes before but they are often too dense to cook well. I had leftover fresh pumpkin in the fridge and I decided to give this a try - it was WONDERFUL! I did make one change - I used half white and half whole wheat flour. Also, on a few of the pancakes as they were on the griddle I sprinkled dried cherries and chopped walnuts, which were absolutely excellent and really kicked them up a notch. Pumpkin is loaded with goodness, and I am always happy to find new ways to introduce it to my kids (other than pie ;)) Saving for future....thanks!

Beef Enchiladas II
This is simple and good. I have to agree with the comment about the corn tortillas - they are the "real deal". Also you would need to use white cheese and white onions to be authentic. That said, make them however you like! Corn tortillas are a little grittier of a texture, but I love them that way and flour is a bit softer and in my opinion, less absorptive. I also would season that beef up, and yum-bo...
