Firecracker Scallops

I would make a couple changes. Instead of garlic salt, use fresh minced garlic and a pinch or two of sea salt. I would also take that green onion pictured (but not included in recipe) and add it to the sauce. I would also add some course ground black pepper, just 1/4 tsp mainly for the visual effect it would add.

Spinach Casserole

This is a very good recipe, but I am a very picky (organic) eater, so my modifications are... I made a big batch of cream of celery/mushroom soup with onion and roasted garlic from scratch (seasoned with sea salt, gourmet pepper blend and basil). I leave the cut up vegetables in the soup, many people strain them out. I used part of the soup to mix with the cream cheese (saved the rest as soup), then drizzled that over fresh spinach and used a fork to work it in a little. When it was almost done baking, I sprinkled the surface with a mexican 3 cheese shred blend. I did not use the fried onions. Nothing wrong with them, I just never have liked them :) Next time I might sautee some bread crumbs in a little butter and sprinkle on top of the cheese, then broil briefly. That would probably be a very nice finishing touch... if you don't care for the fried onion topping.

Dill Pickles

I have been making pickles for many years, and this is a great recipe. The ONLY reason I am not giving 5 stars... is sanitation. Soaking cukes in bathtub, or sink? I always use a large container which has been sanitized, and don't use tap water. The later processes are not enough to kill off bacteria that is likely to find its way in during the soaking, and even the salt and vinegar may not be enough to get what the limited heating up during the bath process misses. Again, great recipe... just be careful with the processes. Sorry, my OSHA background takes over sometimes :)

Cream of Celery Soup

Lucky me! I needed celery soup for another casserole recipe. I eat organic, and I could not find canned organic celery soup... so I found this, the one and only straight up celery soup on this site :) Awesome recipe. I, like others, couldn't do away with the solids, and I added roasted garlic and basil. So, I not only get "better than canned" for the casserole, I have leftover soup to serve at other meals... and again... hats off, this is truly a simple and awesome recipe! In the future, I will use this for other cream soups like mushroom or chicken.

Sweet Italian Chicken Sausage and Tortellini Soup

This is perfect for a chilly night and a movie. It's great as is, but I prefer heartier and spicy meals, so I add sliced carrots, mushrooms, diced onion and seasonings (sea salt, black pepper, basil and dried Mexico Chile pepper).
