Grilled Chicken with Wilted Slaw

Made this tonight for our family (including 3 boys 7,5,2). I usually don't stick too close to the recipe, but wanted to this time so that I could write an accurate review (only changes I made was I shredded my own cabbage with a carrot in place of the coleslaw mix). The chicken was VERY good. Tasty without being an overwhelming or boring flavor. I will definitely be doing thighs this way again. Bonus it was super easy and quick!! The wilted salad met with more mixed reviews. My husband and two year old enjoyed the flavor. The rest of us ate it, but didn't LOVE the caraway seed. I think next time I will use a bit of celery seed instead and a little less vinegar in the salad part. We all loved the bacon flavor and the soft crunch of the salad. I liked how the flavors of the two parts of the meal complimented each other. This was a really nice, healthy weeknight meal and I will make it again with a few tweaks!

Lemon Coconut Thai-Inspired Pasta

This was just okay. I Wasn't a huge fan of the flavor of this sauce. A little too acidic and not the nice creaminess I was hoping for with the coconut milk, I would say the lemon is the dominant flavor. The whole family ate it, but not something we will make again. I did add some shredded carrot and cucumber to the bed of salad and I liked the idea of a warm noodle dish over salad. It had a nice fresh feeling for a pasta dish.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

Ah-MAZING! This soup is so good and will be one of my favorite go to soups. Serve with good whole wheat bread/biscuits for supper or perfect to have ready to warm up for lunch guests. Everyone in our family loved the mellow, warm flavours of this soup. We will be making this again, and again, and again!

Pear Scones

I loved this recipe. It was so easy to make and just delicious. My pears were quite ripe and therefore full of flavour. I measured my cut pears (unpeeled) and the suggested amount was perfect for this recipe. I only had whole wheat flour so I used that and I needed my cream for my coffee so I put in plain yogurt and a splash of good vanilla instead. I will definitely be making this again, it was even easier then a quick batch of muffins and healthy enough that I didn't mind the kids sneaking a couple of extras off the counter. Thanks for the delicious, easy recipe!!

Gouda and Broccoli Soup

I found this soup to be quite bland. I loved the idea of a gouda broccoli soup, but this one dissapointed me. I think maybe with some other veggies (yams?) pureed into the broth would add a bit of richness which is lacking. As much as I wanted to love it I will be going back to my regular broccoli soup recipe.

Salmon Tartlets

I had some leftover plank salmon which I used to make these. OTherwise followed the recipe exactly. They were a big hit at our get together. I thought they were easy to make. I froze them uncooked and then thawed in a fridge and baked them off when the guests arrived. Worked beautifully. You know they are good when several people ask for the recipe!

Apple Butter Marinade for Chicken

I think this recipe has a lot of potential. Two things I loved was A) SO EASY and B)how the marinade stuck to the chicken and turned it a deep colour. The drumsticks were really lovely to look at once they were cooked (I made them in the oven... didn't broil, but did baste once or twice). I found the molasses taste a bit overpowering. I think next time I will cut that measurement down a bit so the apple and ginger can have a bit more of the stage. This marinade can stretch further then the recipe gives it credit for. I did 5 drumsticks and could have done a couple more. I will make again.

Special Pork Tenderloin

Our young family really likes how sweet and tender this recipe comes out. It is easy to prepare and is always a hit with everyone at our table. The flavour is mild, but tasty. Sometimes we punch it up with a bit more ginger.

Roasted Yam and Kale Salad

We have been trying lots of dishes with Kale as we have a bumper crop this year. This salad was great and a nice side to prep ahead to make the dinner rush a bit less rushed. Unique and delicious! My meat-i-vour husband thought that bacon would be needed to make it acceptable, but once he tasted it his comment was "it could almost have used more kale"!

Curried Coconut Chicken

This isn`t my FAVORITE curry dish as it lacks some the depth of flavour. However, it is still one we will save and make again as it is an easy to make and nicely mild dish that we found to be very family friendly. Our 2 and 4 year old both gave their compliments to the chef.

Honeyed Beef Stew

We put all the ingredients in the crock pot on low all day. We added a shredded potatoe a bit of fresh grated ginger and a dash of cumin. It was very delicious and easy. Will make again.
