This was delicious! We used tofu instead of chicken to shake up our protein intake. Wow, I will put this one in my normal rotation!

Beer Bread I

Reviewed: Sep. 13, 2011
Made this a dozen times, used Miller Lite! It is sweet and comes out perfectly every time. For best results, bake and cool. Refreigerate over night, better the next day and it cuts easier when it is cold.

Pesto Sauce

Walnuts are a cheaper alternative than pine nuts and this recipe is just as delicious. Many recipes call for pine nuts, I think the walnuts offer more flavor, pine nuts can sometimes taste like wet paper! Great recipe, we are making it tonight for the second time, great weeknight recipe, good job!

Change-up - we used PORK tenderloin instead of beef. This recipe still holds with the pork! Follow to the tee - it is delicious and savory!

Beef Barley Vegetable Soup

Reviewed: Dec. 29, 2010
This is hearty! The barley adds an excellent texture. Add the barley to the slow cooker as the recipe instructs (I added 3/4 cup, not 1/2 cup) and they plump in the beef stock and drippings. For added decandence, you can add 1/2 cup of heavy whipping cream at the end!

Soft Oatmeal Cookies

Reviewed: Jan. 6, 2011
I used the granulated sugar substitute in place of the white sugar to bring down calorie count. I also doubled the vanilla to 2 teaspoons (used Mexican vanilla - you can find this at mexican food mart - it is better than the regular big box store vanilla). These are AMAZING cookies! GREAT recipe, I have made them 3 times, always a hit!

In a word - WOW! Served this at a party with crusted snapper - crowd pleaser!!! Used the bagged cabbage mix rather than the three specific types. A-ma-zing!
