Bulgur Wheat with Dried Cranberries

DO NOT USE the amount of chicken boullion in this. Use about half, this was super salty the first time I made it. The second time, I used boxed chicken broth in place of the water and then seasoned it at the end so I could control the salt. The bulgar and cranberry combo is awesome - this is a great side for a weeknight meal - a real change-up from white rice or bland pasta as a side. The texture is hearty and filling. Buy a large bag and store it - great survival food as well.

Soft Oatmeal Cookies

I used the granulated sugar substitute in place of the white sugar to bring down calorie count. I also doubled the vanilla to 2 teaspoons (used Mexican vanilla - you can find this at mexican food mart - it is better than the regular big box store vanilla). These are AMAZING cookies! GREAT recipe, I have made them 3 times, always a hit!

Beef Barley Vegetable Soup

This is hearty! The barley adds an excellent texture. Add the barley to the slow cooker as the recipe instructs (I added 3/4 cup, not 1/2 cup) and they plump in the beef stock and drippings. For added decandence, you can add 1/2 cup of heavy whipping cream at the end!

Simple Ranchy Breaded Fish Fillets

you need to flour the filets first before you coat them, so the egg mixture can stick. Pretty good, very easy weeknight meal.

Pan Roasted Pork Tenderloin with a Blue Cheese and Olive Stuffing

Heaven! I thought the mixture of flavors would be too potent, but it made the pork sing. I used onions instead of shallots, but followed exact for all other items. Will keep this on the "special night" recipe list! Served with smashed potato and covered the starch in the wonderful pork sauce. Great recipe!

Pesto Sauce

Walnuts are a cheaper alternative than pine nuts and this recipe is just as delicious. Many recipes call for pine nuts, I think the walnuts offer more flavor, pine nuts can sometimes taste like wet paper! Great recipe, we are making it tonight for the second time, great weeknight recipe, good job!
