I made a small 3 lb roast and it came out perfect. Seasoned and seared it before putting into the slow cooker. The key is cooking it long enough. After reading some reviews, I thought I should cook it for shorter, since it was a smaller roast. I put it in the cooker on low for 5 1/2 hours and it was tough. I figured I overcooked it until my boyfriend told me I didn't cook it long enough because a roast is a cheaper tougher cut so you need to give it time for the tendons to break apart. My suggestion is, if it is too tough, chances are you didn't cook it long enough. I put it on for a couple more hours and it was perfect and it was a hit at dinner, and just soooo easy for me. I'll be making this again, definitely.
