Thanksgiving No-Turkey Turkey

very yummy. shared with strict carnivores and even they complimented the taste, wasn't sure of the texture but they loved the taste and tolerated the texture of tofu.

Best Marinara

Tofu Turkey I

I just mixed it altogether. The "stuffing" of it didn't work for me the first time so the 2nd time I mixed it altogether and liked it better. Easier, didn't change the taste which is good.

Italian Wedding Soup I

Very good base recipe. Being a dietitian, I like more vegetables so I added more carrots, celery, subbed bok choy instead and used others advice to only add 1/2 cup cooked orzo. Do cook orzo seperately. Also added a bay leaf in for another dimension of flavor. Soup was better the 2nd and 3rd time so definately make extra.

Lentil and Green Collard Soup

Had high hopes but this was just ok. I even used my homemade rich vegetable broth but the flavor was lacking. Needs more garlic, added carrots, celery, onion, bok choy, diced tomatoes for color. Added tumeric, bay leaf,and last I added a little lowfat smoked sausage which did the trick to improve this bland beginning soup.

Cabbage Rolls II

Ok but needed more flavor. Didn't like the sweet tomato sauce with it. Add would bake instead of using crock pot next time. My whole house stunk for two days.

Roasted Pork Loin

Very good, simple recipe. Only change/s I made; (1) assembled in crock pot on low; (2) added ~ 1 tsp fresh lime juice to perk it up a bit. Also took others advice and when it was done, added a little cornstarch to crock pots contents to make a slightly thickened glaze for mashed potatoes. Wonderful and so simple.

Split Pea Soup

Used 1/2 chicken, 1/2 ham broth. Used center cut slice of ham instead of bone. Added 2 cups each: carrot, celery, potato. Threw in handful of roasted red peppers I had to use and added nice color contrast. Added 2 bay leaves, 1-2 Tbsp. fresh dill and about 1/2 cup fresh parsley in place of the herb seasonings and this was a 5 star conversion.

Marie's Easy Slow Cooker Pot Roast

I don't like beef roast but I loved this one. I tried it because my husband is the beef eater and he loved it too. So from a non-beef eater, this is definately worth trying. Made no changes because I don't usually eat, nor do I cook beef so didn't know where to begin modifying it but it was great the way it was.

Braised Balsamic Chicken

1/2 the balsamic vinegar. I used 20 year aged organic balsamic vinegar that's awesome in salad dressing but was over powering in this until I doubled the tomates, garlic and spices to balance out the vinegar. Otherwise good recipe.

Sweet and Spicy Green Beans

loved the flavors. I did add an extra clove of garlic for my tasted. Also added a Tbsp of Mirin (sweek sake) and some sesame seeds for my liking but base recipe is very good. Served them with Beef Stroganoff and mashed potatoes which added a nice contrast of flavors. Thank you

Thai Peanut Chicken

Doubled the sauce like others suggested and added a little water to thin just a bit (my sauce was really thick with the peanut butter but I used fresh ground peanuts which may have altered the texture). Added like others said, more garlic (4-5 cloves), handful of chopped cilantro, omitted the peanuts since the sauce was peanutee enough, added 1-1/2 Tbsp. Mirin (sweetened sake found in Asian section) and served with lime slices and extra hot garlic-chili sauce and this was a 5 star.

Spanish Rice Bake

Good base but I also thought it too sweet and made some changes (hence 4 starts instead of 5). Also easy recipe. Changes I made to fit my taste: - no sugar; - subbed can tomatoes with green chilies instead of plain tomatoes; - used salsa with extra cumin and chili powder in place of chili sauce; - 2 garlic cloves minced; - 4 oz. cream cheese stirred in to melt (will cool down the green chiles if don't like too hot); - added chopped avocado and olives before baking. My husband loved it this way and used as a filler for a wrap sandwich for lunch the next day and then the leftovers we used for nachos. Thanks for sharing recipe.

Brunch Enchiladas

Very good and I followed others advice to push down the tortillas in the egg batter several times and they came out soft. I did tweak to my liking but a great basic recipe; thanks for sharing. I added 2 Tbsp. Dijon-mustard to the ham filling which was a nice addition for me otherwise made as is and was excellent.
