Buttery Caramel Apple Jam

This tastes heavenly! I was looking for ways to use up a lot of extra apples this year, and someone told me about this recipe. I also made a variation where I added in some rum when I stirred in the sugar. Whichever way you do it, this recipe is sure to impress! Thanks for sharing it.

Oatmeal Peanut Butter Cookies

Absolutely delicious! Just the right blend of soft and moist with a little bit of crispiness. Over time, I made some minor tweaks because of allergies and ingredients on hand. I use all butter instead of shortening and margarine (my husband has a soy allergy). I add an extra 1/2 cup oats, and also cut the salt back to 1/2 tsp, since my peanut butter and butter have salt in them. They turn out fabulous every time, even when I make them gluten free with rice flour. I love peanut butter cookies and these are my favorite!

Easy Taco Seasoning Mix

Very simple to make, as I keep all those ingredients on hand to begin with. Could maybe use a wee bit of cayenne or something like that to give it some "kick". Otherwise, the combination tastes great - I will use this as a base, and play with the heat level.

Sweet Dinner Rolls

Absolutely love these! You know you have a good recipe when there are over 2100 reviews! I usually make them into rolls in a lightly greased 9x13 pan, I've made these with part whole wheat & part all-purpose flours, and have also made them with buttermilk. I'm thinking of making them as herbed rolls next. So much room for variations, and I can count on a perfect result every time.

Sweet and Sour Meatballs (Suan T'ien Niu Jou Po Lo La Tzu)

We really enjoyed this recipe served over rice. I had some leftover meatballs to use up from another recipe, so I just made the sauce and veggie combo as listed here (with the addition of some broccoli to the mix). I did sautee the vegetables before adding everything into the sauce mixture. Overall, the recipe has a nice flavor to it. I made this looking for something different, but I ended up with a recipe that I'll definitely be making often. Thanks for sharing!

Red Beans and Rice

Great recipe! This was my first time making beans and rice, and it turned out like a charm! Two things I did different, were to use bacon instead of sausage (it was all I had on hand), and I used fresh onion. Hubby absolutely LOVED it, and after we each enjoyed a good helping, I froze the leftovers for future meals (since it's only the two of us at home).

Sour Cream and Horseradish Asparagus

This is a wonderful way to do asparagus; definitely a keeper! After reading the reviews about all the sauce, I cut back on the sour cream to 1 cup and kept the horseradish the same. Due to a wheat allergy, I had to find a gluten-free alternative to the bread crumbs, so I used finely chopped/ground nuts. Very easy to make, too.

Chicken Pot Pie IX

Absolutely delicious! Made this with the Gluten-Free Pastry recipe from this site. Only change I made was to use tapioca flour instead of all-purpose as the "thickener" for the sauce (due to a wheat allergy). This one is a keeper!!

Gluten Free Pastry

Best pie crust I've ever made out of gluten free ingredients! This is one recipe where you can really benefit from reading all the reviews because many were quite helpful. I tripled the recipe for a double-crust pie. Knowing in advance that the crust was hard to keep together (thanks to the reviews), I pat the bottom into place, and tried (successfully) to roll out the top crust between 2 sheets of wax paper, keeping the outer side "papered" until after I positioned the crust. I also supplemented the rice flour with some tapioca flour to help smooth out some of the "grainy" texture. I also omitted the vanilla so I could use the crust to make a Chicken Pot Pie from this site. I'll be going to this pastry recipe all the time now!

Maple Zucchini Bread

This recipe is delicious, perfectly moist, and also adapts very well to gluten free ingredients. I used 2 1/4 Cups rice flour instead of the all-purpose, and (like another reviewer), used oats instead of wheat germ. We are maple lovers in this house, so this will get made often.

Cranberry Cream Cheese Bars

02-13 These were a big hit at our house! Very rich - a small piece really satisfies the sweet tooth. I reduced the sugar down to 2/3 cup. Perhaps a little more cranberry sauce would go well next time, but overall fabulous! Will definitely make more from time to time. Updated 11-13 - Have made these many more times, doubling the cranberry filling per other's suggestions and adding 1/4 tsp lemon extract to the cream cheese for an extra "zing".

Cheddar Dill Muffins

These are wonderful! I make them fairly regularly, as they are very versatile to be either a brunch, dinner, or snacking muffin. I do add an extra half cup of cheese, and have to reduce the flour slightly because I make them with rice flour. However, two TBSP of baking powder seems to be waaay too much leavening agent, and I even considered that it could possibly be a recipe typo. I reduced the amount of baking powder down to 2 TSP and still ended up with beautiful fluffy muffins. Mmmm.

Apricot-Coconut Squares

I thought these were a bit too sweet the first time I made them, so I reduced the brown sugar down to 2/3 cup, and omitted the confectioner's sugar. I also used chopped almonds instead of walnuts as a matter of personal preference. Very good occasional treat!

Zucchini Apple Bread

Bread is light and fluffy - not too sweet. I added an extra 1/2 cup of apples per some of the comments of the other reviewers. Also omitted the walnuts based on personal preference. Converts to gluten free really well, too (just minus a few tablespoons of flour if using rice flour). Very yummy - will make again, soon!

Spicy Garlic Lime Chicken

We absolutely love love love this recipe! I follow it exactly, but only using 3 chicken breasts so I can slice them horizontally and sprinkle a little bit of spice mix inside the meat. There is usually just enough "sauce" to jazz up some rice on the side. Dinner is just hubby and me, so the third breast becomes the next day's lunch: either in a wrap or chopped up on a salad. Yum!

Rockin' Good Smashed Cauliflower with Garlic

This was easy and delish! ...especially considering I wasn't overly precise on the measurements of the ingredients. I used fresh cauliflower instead of frozen and parmesan cheese in place of the parm-reggiano blend. My husband can't have mashed potatoes the way he used to be able to, and he told me this was a great substitute. Thanks for a wonderful recipe - this one goes in our regular rotation!

Cream Cheese Frosting II

This is the only cream cheese frosting recipe I use now! I have been making it for about a year, and usually only make 1/2 the recipe. Most of the time I just do the recipe exactly as written, but I have occasionally varied it successfully by adding things like cocoa, or lemon extract, or maple syrup/extract, or toasted coconut with coconut cream. Best as is, but still makes a great base for these other flavors as mentioned. Super easy and yummy!

Cheesy Baked Cauliflower II

This is absolutely delicious! I added some garlic powder, onion powder and oregano, and with those small changes, I'd say it deserved more than 5 stars. I just know it's going to get made often. DH had seconds, and requested I make more of it just 2 or 3 days after polishing off the first batch. Thanks for sharing!
