Cranberry Sauce I

First batch I made exactly as directed. It was runny and a little too tart tasting (but still very good). For the second batch, I took the suggestion of only using a half cup of OJ and it turned out absolutely delicious but it gelled a little too much. Now I'm working on batch number 3. I used a little more than 1/2 cup but not quite 3/4 cup orange juice and I'm hoping it'll be just right. Also, definitely use fresh squeezed orange juice to get that super fresh taste. Concentrated OJ makes it too sweet and kind of "preserved" tasting.

Double Layer Carrot Cake with Cream Cheese Frosting

This is seriously THE BEST carrot cake. My grandmother used to make a wonderful carrot cake and when she passed away nobody in the family was able to find the recipe. Everyone says that this is the closest anyone has come to perfecting "grandma's recipe" I have made it twice now and there is never a crumb left. It is absolutely marvelous. I followed other people's suggestions and only used one cup oil. This recipe has officially replaced Grandma's recipe and I will continue to make it for years to come. Thanks Tracy

Roquefort Pear Salad

I was so excited about this salad and I'm disappointed to say I was not impressed. I followed the recipe almost exactly- I increased the amount of pecans and made double the dressing (but didn't use it all). The Roquefort was overpowering and the flavors didn't blend as well as I had thought. I may try it again but modify it.

Cinnamon Bun Icing

I very rarely write reviews but I just made this icing and OMG! It is SO good. I cut the recipe in half because I only have 9 rolls. I used neufchatel cheese after reading some of the reviews about the cream cheese flavor being overpowering. I also slightly reduced the amount of confectioner's sugar by 1/4 cup (to 1 1/4 cups). I have never been able to get my 2 1/2 year old to eat a cinnamon roll with icing until today. Definitely a keeper!

Rempel Family Meatloaf

I typically hate meatloaf but I LOVE this recipe. It's so easy and always turns out great. I used some of the suggestions from other reviewers and added a glaze made of ketchup, Worcestershire, honey and brown sugar. I haven't perfected the glaze yet but the meatloaf is fantastic.

Party Pinwheels

I added turkey and some fresh spinach but eliminated the olives and celery. They were delicious, however, they are a little rich, in my opinion- but they are a real hit at parties!
